Sorry for the load of recipes that include pancake mix. I think you can tell by now that pancake mix quick breads are slowly becoming one of my go-to recipes. I’ve been making tons of variations that I haven’t even posted yet. I think so far I’m up to three pancake mix banana bread recipes, so apple bread is a nice change.
Plus I mean it’s fall so apples are in season right now and you might as well use them up.
Apples and cinnamon are also a match made in heaven combo, but so is cinnamon and raisins. So naturally I combined the two for an double whammy flavor combination. It was definitely a great decision on my part.
This bread is sweet, but not overly sweet. It would be great with a slather of natural peanut butter or jam. Or honestly anything 🙂
Here is what you need to make the recipe:
pancake mix
coconut sugar
cinnamon
non-dairy milk
eggs (or flax egg for vegan option)
applesauce
apples
raisins
Pancake Mix Apple Cinnamon Raisin Bread
Ingredients
- 2 cups pancake mix I used kodiak cakes
- 1/4 cup coconut sugar
- 1 tsp. cinnamon
- 1/2 cup apple sauce
- 2 eggs beaten (use flax eggs for vegan option)
- 1/2 cup milk any kind will work
- 1 apple thinly sliced
- 1/2 cup raisins
- Topping optional
- 1/3 cup chopped walnuts
- 2 Tbsp. coconut sugar
Instructions
- Preheat oven to 350 and spray a loaf pan with oil (or line with parchment paper) and set aside.
- Mix pancake mix, coconut sugar and 1/2 tsp. cinnamon in a large bowl and set aside. Mix eggs, applesauce, and milk in a small bowl, add to dry ingredients and combine well.
- Mix sliced apple with remaining 1/2 tsp. of cinnamon. Add to batter along with raisins. Mix topping ingredients together and sprinkle on batter.
- Bake for 25-30 minutes or until done.
