Preheat oven to 350 and spray a loaf pan with oil (or line with parchment paper) and set aside.
Mix pancake mix, coconut sugar and 1/2 tsp. cinnamon in a large bowl and set aside. Mix eggs, applesauce, and milk in a small bowl, add to dry ingredients and combine well.
Mix sliced apple with remaining 1/2 tsp. of cinnamon. Add to batter along with raisins. Mix topping ingredients together and sprinkle on batter.
