Hello Guys! I’m excited to share this recipe with you all today! This recipe (like others I’ve made) is born from past recipe creations morphed together.
As I was looking through my Pinterest board yesterday, I came across this Flourless Pumpkin Snack Cake. I remembered how amazing this recipe was (I mean, come on! You can’t go wrong with pumpkin cake with a chocolate frosting).
Then, I scrolled down to these Peanut Butter Banana French Toast Rollups and immediately had an epiphany. This was my discernment from God telling me to make a PB-Banana version of the flourless snack cake!
In my opinion, you can never go wrong with the peanut butter and banana combo, – it is always a winner year-round (for me at least). I think most people would agree with me, though I am probably slightly biased.
But, let me tell ya, this cake is oh-so-good. The base is adapted from the pumpkin version and it’s just so fluffy and moist, you would never be able to tell it’s flourless!
Additionally, this cake is suitable for dietary restrictions as well. It’s not only gluten-free but can also be vegan and paleo-friendly too! If you’re vegan, just sub a flax egg. Paleo? Sub in almond butter for the frosting.
Furthermore, this PB banana snack cake is so simple and easy to make too!
Ingredients Needed For This Flourless Cake
Bananas
Egg/flax egg
Baking soda
Peanut Butter Mousse
Flourless Peanut Butter Banana Cake Substitutions:
Peanut Butter: You may substitute any natural smooth nut butter such as almond butter, cashew butter, sunflower seed butter, etc.
Maple Syrup: You may sub in any liquid sweetener such as honey or agave.
Peanut Butter Mousse: You may omit and add in chocolate chips and crushed pecans instead!
Storing This Flourless Peanut Butter Banana Cake
Store this cake in the fridge for 1-2 weeks!

This banana snack cake is completely flourless and made with only 5 real food ingredients! It’s topped with a creamy peanut butter frosting and makes the perfect healthy dessert or snack! It’s naturally sweet and completely gluten-free. Also with paleo and vegan options!
The BEST Flourless Peanut Butter Banana Cake
Ingredients
- 1 cup natural smooth peanut butteror cashew/almond butter
- 2 ripe bananas mashed
- 1/4 cup pure maple syrup
- 1 egg beaten (sub flax egg for vegan option)
- 1 tsp. baking soda
- Peanut Butter Frosting (link to recipe in recipe notes below) replace with almond butter for paleo
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients in a bowl until mixture is smooth.
- Spread batter into 9x9 or 8x8 square pan sprayed with cooking spray or lined with parchment paper.
- Bake for 30 minutes, or until done.
- Make the peanut butter frosting. We used this recipe from the Minimalist Baker 🙂
- Slice into 9 pieces.
- Enjoy!

Just made the cake. Not as fluffy as the picture but very good. I used honey instead of syrup. Instead of frosting i will use a little butter or cream cheese to keep the carbs down but it’s actually moist enough it doesn’t need anything. A small piece will definitely satisfy my sweet craving. It’s a keeper!

This was delicious! I substituted honey for maple syrup seeing as I didn’t have any on hand. Found that my cake didn’t rise much in the center so instead of cutting into squares, I cut into 8 slices which I think actually looked even nicer! My peanut butter coconut mousse topping came out quite runny as I don’t own a mixer or whisk, so had to mix by hand with a spoon, but I improvised a bit and used it as somewhat of a sauce, with drizzles of salted caramel over top. Wish I’d taken a picture because it looked seriously lovely – had many people complimenting it for days afterwards! Thanks very much for a delightful recipe 🙂

Yum! I cannot believe how good this turned out. I mixed up the batter in my food processor so it turned out very fluffy and cake-like. You would never guess there’s no flour in it. I watch my carbs so I subbed Swerve sweetener in both the batter and the frosting and it turned out wonderful.

Perfect recipe! Easy and delicious! I used a food processor to mix all the ingredients and the cake came out nice and fluffy! It is very good without the “icing” but taking the extra time to make it definitely takes it to another level of awesomeness! Thanks for such a simple and delicious recipe!

I made this recipe last week and it was actually amazing! My family and me couldnt believe that there was no flour! But I have a question, can I possibly make this in a 8 by 5 loaf pan and would it still come out as good? I just wonder because I kind of want to give off that banana bread instead of snack cake vibe.
