Healthy Banana Latte Baked Oatmeal
What’s more warming than a freshly brewed coffee on a chilly winter warming? Hot baked oatmeal. I thought it was a good idea to combine the two into a hearty and comforting breakfast that is super tasty and guilt free!
Healthy Banana Latte Baked Oatmeal {GF + Vegan}
Ingredients
- 2 cups oats
- 1 ripe banana mashed
- 1/2 cup coffee
- 1 egg or flax egg
- 3/4 cup almond milk
- 2 tbsp sliced almonds
Instructions
- In a medium size bowl, mix together all ingredients, combine well
- Place mixture in a glass pan coated with cooking spray
- Top off with more banana coins and sliced almonds, if desired
- Bake at 350 degrees for 15 minutes, or until done
- Enjoy!

I baked this last night and had it for breakfast today. It was delicious! I wonder if I should have left the oats to soak up the liquid a bit before putting it into the oven though. Mine never browned or crisped up the way it looks like your did. I let it bake for 25 minutes so that it did finally set up but I didn’t want to cook it longer since I was worried about it burning.
did you use a glass pan or metal?
It was a square glass pan.
It might have cooked longer, depending on your oven. It could possibly need 5-10 more minutes of baking!

WE used old fashioned but you can use either one! Hope you enjoy!
This says it’s vegan, but is made with eggs. In the fine print it says it “can” be vegan, but does not offer the necessary substitution. Anything “can” be vegan, but when you advertise a recipe as vegan, it would sure help if you gave the ingredients and instructions to make it so. Thank you.
