Pancake Mix Carrot Cake Banana Bread

Healthy Pancake Mix Carrot Cake Banana Bread will be your new favorite quick bread! It’s studded with raisins, white chocolate chips and walnuts and only 9 ingredients!  Vegan + GF options

Ingredients
  

  • 2 cups complete pancake mix
  • 2 ripe bananas mashed
  • 1 cup shredded carrots
  • 2 eggs beaten
  • 1/2 cup milk
  • 1/4 cup maple syrup
  • 1/2 cup raisins
  • 1/2 cup white chocolate chips
  • 1/2 cup walnuts

Instructions
 

  • Preheat oven to 350 degrees. Spray a loaf pan with cooking spray or grease with coconut oil/butter. Set aside.
  • Add pancake mix to a large bowl.
  • In a separate bowl, mix together bananas, shredded carrots, eggs, milk and maple syrup until mixture is smooth. Add to pancake mix. Mix well to form a smooth batter.
  • Fold in raisins, white chocolate chips and walnuts. Pour batter into loaf pan. Spread the top so it is in an even layer. Top with more banana slices (optional).
  • Bake for 35-40 minutes, or until done. Let cool before slicing.
