Ingredients

cups
pancake mix
(I used kodiak cakes, but you can use any vegan/GF option)
1/4
cup
coconut sugar
(can substitute 1/4 cup of liquid sweetener in place)
1
cup
canned pumpkin
2
eggs
(beaten (use flax eggs for vegan option))
1/2
cup
non-dairy milk
(any kind will work)

cup
fresh or frozen cranberries
1/2
cup
mini dark chocolate chips
1/4
cup
white chocolate chips
Instructions
Preheat oven to 350 and spray a loaf pan with oil (or line with parchment paper) and set aside.
Mix pancake mix and coconut sugar in a large bowl and set aside. Mix pumpkin, eggs and milk in a small bowl, add to dry ingredients and combine well.
Add cranberries and chocolate to batter and mix well. Pour into loaf pan
Bake for 30-35 minutes or until done.
