Flourless Carrot Cake {Paleo + Vegan Option}

Ingredients
  

  • 1 cup cashew butter or nut butter of choice
  • 1 cup shredded carrots
  • 1/2 cup applesauce
  • 1/4 cup maple syrup
  • 1 egg beaten (sub flax egg for vegan option)
  • 1/2 tsp. baking soda
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup white chocolate chips
  • 1/4 cup raisins

Instructions
 

  • Preheat oven to 350 degrees. Line a 9x9 pan with parchment paper and set aside.
  • Mix first 6 ingredients in a large bowl.
  • Stir in remaining ingredients.
  • Pour batter into pan in an even layer. Bake for 25-30 minutes, or until golden.
  • Let cool and slice into 9 pieces. Drizzle more white chocolate on top, if desired.
