Ingredients

cashew butter
or nut butter of choice

cup
shredded carrots
1/2
cup
applesauce
1/4
cup
maple syrup
1
egg
beaten (sub flax egg for vegan option)
1/2
tsp.
baking soda
1/2
cup
shredded unsweetened coconut
1/2
cup
white chocolate chips
1/4
cup
raisins
Instructions
Preheat oven to 350 degrees. Line a 9x9 pan with parchment paper and set aside.
Mix first 6 ingredients in a large bowl.
Stir in remaining ingredients.
Pour batter into pan in an even layer. Bake for 25-30 minutes, or until golden.
Let cool and slice into 9 pieces. Drizzle more white chocolate on top, if desired.
