Sweet Chili Garlic Butternut Squash Fries { Paleo & Vegan }

Ingredients
  

  • 1 small butternut squash peeled and bulb end cut off
  • 2 Tbsp. olive oil
  • salt and pepper to taste
  • Sweet Chili Garlic Sauce
  • 2 cloves garlic minced
  • 1/4 cup maple syrup
  • 1/4 cup Fire Cider apple vinegar & honey tonic
  • 1/4 cup coconut aminos
  • 1/2 tsp. red chili flakes
  • 2 Tbsp. water

Instructions
 

  • Preheat oven to 400 degrees. Line a cooking sheet with parchment paper or spray with cooking spray and set aside.
  • To make sauce, combine all ingredients into a sauce pan. Whisk together and place on medium-low heat until simmers. Let simmer for 5 minutes then turn off heat.
  • Cut squash into fry form. Mix with olive oil and place in a single layer on a cooking sheet.
  • Bake for 20 minutes. Take out and brush 1/2 of the sauce onto each fry. Bake another 10 minutes, flip fries and brush on remaining sauce. Bake another 10 minutes.
