Energizing Zucchini Bread Breakfast Cookies

Ingredients
  

  • 2 cups GF oats
  • 1/2 tsp. cinnamon
  • 1/2 large zucchini shredded
  • 1/2 cup raisins
  • 1/2 cup sunflower seeds
  • 1/2 cup dark chocolate chips
  • 1 cup apple sauce
  • 1 egg beaten (sub flax egg for vegan option)

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine all ingredients in a large bowl, mixing well and scraping the sides of the bowl each time.
  • Spray cooking spray on a cooking sheet and spoon batter equally into 10-12 cookies.
  • Bake for about 15 minutes, or until cookies are done.
