Strawberry Tahini Crumb Muffins

Ingredients
  

  • 1 cup almond flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 cup tahini
  • 1/2 cup apple sauce
  • 1 egg beaten or flax egg
  • 1/4 cup pure maple syrup
  • 1 cup sliced strawberries
  • Crumb topping
  • 1/2 cup almond flour
  • 2 Tbsp. coconut oil not melted
  • 2 Tbsp. pure maple syrup

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine almond flour, baking soda and cinnamon in a large bowl.
  • In a separate bowl mix together tahini, apple sauce, egg, and maple syrup until smooth.
  • Add wet mixture to dry mixture and mix to form a batter. stir in sliced strawberries.
  • Spoon batter 2/3 full into 9-10 lined muffin tins.
  • To make crumb topping, place all ingredients in a bowl and mash with a fork until crumbles form. Spoon onto each muffin.
  • Bake for 25-30 or until done.
