Ingredients
CRUST

cup
coconut flour
1/4
cup
dark cocoa powder
1/2
cup
coconut oil
melted
1/2
cup
maple syrup
1/4
tsp.
vanilla extract
FILLING
2.5
cup
cashews
soaked in water overnight then drained

cups
fresh mint leaves
1/3
cup
coconut oil
melted
1/4-1/3
cup
maple syrup
1/2
tsp
vanilla extract
1/2
cup
mini dark chocolate chips
Instructions
Line an 8x8 pan with parchment paper.
Combine all ingredients for crust in a bowl. Press evenly into bottom of pan and set aside while making the filling.
Add cashews in food processor/blender and process until creamy. Add in mint leaves, melted coconut oil, maple syrup, vanilla and combine well.
Take filling out of food processor and fold in mini chocolate chips.
Spread filling evenly on crust and place in freezer for an hour.
Slice into9 bars.
