Gooey Cinnamon Toffee Flourless Blondies {Gluten-Free, Paleo + Vegan!}

Ingredients
  

  • 1 cup cashew butter
  • 1 ripe banana or 1/2 cup applesauce
  • 1/4 cup maple syrup
  • 1/2 cup unsweetened coconut flakes
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 cup white chocolate chips
  • 1/4 cup sliced almonds
  • 1/4 cup pecans

Instructions
 

  • Preheat oven to 350 degrees and line an 8X8 pan with parchment paper. Combine cashew butter, banana, maple syrup, cinnamon, vanilla and baking soda in a bowl. Fold in coconut, white chocolate chips and nuts. Add batter to pan and smooth out the top so batter is even. Bake for 15-20 minutes, or until golden. Let cool and slice into bars. Enjoy!
