Blueberry Strawberry Shortcake Mug Cake {Vegan + Gluten-Free!}

Ingredients
  

  • Mug CAKE
  • 1/4 cup oat flour
  • 1 Gluten-Free Graham Cracker Sheet finely crushed
  • 1/4 tsp baking powder
  • 1/8 tsp cinnamon
  • 1 egg or flax egg
  • 1/2 tbsp maple syrup
  • 1 tbsp almond milk
  • FILLING + TOPPING
  • vanilla greek yogurt/coconut cream
  • fresh strawberries and blueberries
  • crushed graham crackers

Instructions
 

  • Grease a ramekin/mug with oil/butter.Mix all ingredients for cake in a small bowl and spoon batter into mug. Microwave for 1-1:30 minutes, be careful it doesn't overflow. Let cool than cut in half and serving with filling and toppings.
