Roasted Grapefruit Baklava Greek Yogurt Breakfast Bowl

Ingredients
  

  • segments from one grapefruit
  • 1/2 tsp. coconut sugar
  • 2 Tbsp. chopped pistachios
  • 2 Tbsp. chopped walnuts
  • 1 Tbsp. golden raisins
  • 1 tsp. honey sub maple syrup for vegan option
  • 1/4 tsp. cinnamon
  • 1 Tbsp. chia seeds
  • 1 cup greek or coconut yogurt

Instructions
 

  • Preheat oven to 350 degrees.
  • sprinkle coconut sugar on top of grapefruit segments. Place on a cooking sheet lined with parchment paper. Bake for 20 minutes, or until slightly roasted.
  • Combine pistachios, walnuts, raisins and cinnamon in a bowl. Add in honey and mix together.
  • Add yogurt to a bowl. Add on roasted grapefruit, nut and honey mixtures and chia seeds.
