Oatmeal Raisin Cookie French Toast Cups

Ingredients
  

  • 10 slices bread cubed (gluten-free if needed)
  • 2 cups oats gluten-free if needed
  • 4 eggs beaten
  • 1 cup almond milk
  • 1/2 cup applesauce
  • 1/4 cup pure maple syrup
  • 1/2 tsp. pure vanilla extract
  • 1/2 tsp. cinnamon
  • 1 1/2 cup raisins

Instructions
 

  • Preheat oven to 350 degrees.
  • Beat eggs, milk, applesauce, maple syrup, vanilla and cinnamon in a large bowl.
  • Mix in bread, oats and raisins and combine well.
  • Place muffin liners in muffins tins and spoon on mixture into 12 slots.
  • Bake for 20 minutes, or until done.
