Gluten-free Blueberry Peach Cobbler

Ingredients
  

  • Cobbler:
  • 1 cup gluten-free all purpose flour
  • 1/2 cup coconut sugar
  • 2 tsp. baking powder
  • 1/8 tsp. cinnamon
  • 1 egg beaten (or flax egg for vegan option)
  • 1/3 cup almond milk
  • 2 Tbsp. coconut oil melted
  • 1/4 tsp. vanilla extract
  • 1 cup blueberries
  • Peaches:
  • 6 cups sliced peaches about 8 peaches peeled
  • 3 Tbsp. coconut sugar
  • 1/2 tsp. cinnamon
  • 1 Tbsp. lemon juice

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large bowl combine flour, sugar, baking powder and cinnamon.
  • In a separate bowl whisk together egg, milk, coconut oil and vanilla. Add to flour mixture and mix well.
  • Add in blueberries.
  • In a separate bowl combine sliced peaches with coconut sugar, cinnamon and lemon juice. Mix Well.
  • Place peaches in a glass pan sprayed with cooking spray. Add blueberry muffin batter on top.
  • Bake for 35-40 minutes, or until top is golden.
