Got Pancake mix? Make these healthy Chunky Monkey Pancake Mix Donuts! They’re made with few ingredients, and full of banana, chocolate and peanut butter flavor! Also vegan + gluten-free options.
I don’t know the last time I made donuts for the blog, but ’twas a long time ago. In fact, I forgot I even had a donut pan. That phrase, “outta sight, outta mind” holds true even for things you value. Ha, but I’m glad I dusted the poor guy off and brought him back to life.
Today I’m sharing with you this easy but epic donut recipe that y’all will adore. I’ve been OBSESSED with pancake mix lately, and have been making everything besides pancakes with it.
I prefer making homemade blender pancakes instead of using the good ol’ mix, but I still put some good use into it.
Case in point: these donuts.
They’re super fluffay, puffy and taste like banana pancakes with pb and chocolate chips. They’re perfect for breakfast, snack anddddd dessert alike. Basically the best of both worlds 😉 Here is what ya need to make ’em:
pancake mix
non-dairy milk
banana
peanut butter
maple syrup
chocolate chips
pb glaze
Chunky Monkey Pancake Mix Donuts
Chunky Monkey Pancake Mix Donuts {Vegan + Gluten-free option}
Ingredients
- 2 cups complete pancake mix can use Gluten-free mix
- 2/3 cup non-dairy milk
- 1 ripe banana mashed
- 2 Tbsp maple syrup
- 2 Tbsp.natural peanut butter
- 1/2 cup mini dark chocolate chips
- Glaze:
- 2 Tbsp.natural peanut butter
- 1 Tbsp coconut oil melted
- 1 Tbsp. maple syrup
Instructions
- Preheat oven to 350 degrees. Spray cooking spray in a donut pan and set aside.
- Add pancake mix to a large bowl. In a smaller bowl, mix together milk, banana, maple syrup and peanut butter. Add to pancake mix and mix well. Fold in chocolate chips.
- Fill slots 2/3 full and baked for 12-15 minutes, or until golden (I made 8 donuts).
- Let cool.
- To make glaze, combine all ingredients in a shallow bowl. Dip tops on donuts in glaze and let hardened. Drizzle dark chocolate on top, if desired.

I have a dumb question: is there any other pancake recipe/mix I could use to make these (even if it’s your own recipe or another blogger’s)? I looked at the ingredients for both this kind of pancake mix and the gluten-free kind, and there are ingredients in both that react with my food sensitivities (particularly the wheat/dairy/sugar). But the donuts look so gorgeous, I wish I could try them. Any suggestions? Thanks a lot!
