Well hello summer! I (Bethany) just finished my first year of grad school last week (whoop whoop), but Rachel is still in class all year round (whomp). With all this extra time on my hands, I’m super duper excited to get my creative recipe juices flowing!
I’ve been dying to make homemade ice cream sandwiches for ages now, and FINALLY created a recipe that I think you guys will enjoy! There are four flavors of sammies and they’re all simple, versatile and tasty! We started off by making simple vanilla and chocolate soft cookies, jammed some amazing ice cream (which I’ll get to in a quick sec) in between, and added a fun twist on each one!
Let me first mention the most important ingredient in the whole recipe….the ice cream of course! What is an ice cream sandwich without the ice cream? Two sad sad cookies. Chocolate Peanut Butter Ice Cream Sandwiches : Chocolate cookies, Swell peanut butter chocolate chip ice cream and drizzled peanut butter
Chocolate Chip Cookie Dough Ice Cream Sandwiches: Vanilla cookies, Swell chocolate cookie dough batter ice cream and mini chocolate chips
Chunky Monkey Ice Cream Sandwiches: Chocolate cookies, Swell dutch chocolate ice cream, crushed walnuts and crushed banana chips
Strawberry Shortcake Ice Cream Sandwiches: Vanilla cookies, Swell vanilla bean ice cream, crushed graham crackers and freeze-dried strawberries
Basically a flavor for everyone!
Healthy Ice Cream Sandwich Ingredients:
Banana
Baking soda
Egg/flax egg
Substitutions for These Healthy Ice Cream Sandwiches:
Almond flour: You may sub in all-purpose flour or gluten-free flour.
Almond Butter: Sub in natural smooth nut butter such as peanut butter, cashew butter or sunflower seed butter.
Maple Syrup: Use another liquid sweetener such honey or agave.
Banana: You can use applesauce, mashed sweet potato or pumpkin puree.
Ice Cream: You your favorite ice cream to place in-between these sandwiches.
How to Assemble Healthy Ice Cream Sandwiches:
Step 1: make the cookies and let cool
Step 2: soften Swell Ice Cream and sandwich between two cookies (or three if you want a triple decker)
Step 3: Add fun additions
Step 4: Refreeze until ice cream is hardened
Step 5: Enjoy!!

Ice Cream Sandwiches!!!
Ingredients
- 1 cup almond flour
- 1/2 tsp baking soda
- 1/2 cup almond butter
- 1 egg or flax egg
- 1/4 cup maple syrup
- 1/2 ripe banana mashed or 1/4 cup applesauce
- 1 tbsp cocoa powder optional for chocolate cookies
- Swell Ice Cream vanilla, peanut butter chocolate chip, chocolate chip cookie, dutch chocolate
- EXTRAS
- crushed graham cracker crumbs freeze dried strawberries, mini chocolate chips, peanut butter, crushed walnuts, dried banana chips
Instructions
- Preheat oven to 350 and line a baking sheet with parchment paper.
- Combine almond flour and baking soda in a large bowl.
- Combine almond butter, egg, maple syrup, banana and cocoa powder, if using in small bowl and mix well.
- Add wet ingredients to dry ingredients and mix well.
- Spoon batter into 12 cookies
- Bake for 15 minutes or until done.
- Let cookies cool completely.
- make ice cream sandwiches and add extras of your choosing!
