We’ve made so many variations, it was so natural that this carrot cake version was next. Carrot cake reminds me of spring and warmer weather, which we are FINALLY getting. After what it seemed like a million blizzards we had on the east coast, the warmer weather is much needed. And so is carrot cake.
To be honest, carrot cake isn’t my favorite type of cake. I usually go for a more decadent chocolate version, but I think I have rekindled my love for it after this recipe!
In another light, lets talk quick about Jesus. With Easter coming up, we must recognize that he was cruxified to save our sins. How amazing is that? And you’re probably thinking, what does Jesus have to do with carrot cake? The answer: everything! He is the reason we celebrate on Easter and make delicious carrot cake 🙂

Here are the ingredients you need:
cashew butter
carrots
applesauce
maple syrup
coconut
raisins
white chocolate chips
egg or flax egg
baking soda
Flourless Carrot Cake
Be prepared to love this carrot cake! You won’t guess that it’s flourless or made with healthier ingredients!
Flourless Carrot Cake {Paleo + Vegan Option}
Ingredients
- 1 cup cashew butter or nut butter of choice
- 1 cup shredded carrots
- 1/2 cup applesauce
- 1/4 cup maple syrup
- 1 egg beaten (sub flax egg for vegan option)
- 1/2 tsp. baking soda
- 1/2 cup shredded unsweetened coconut
- 1/2 cup white chocolate chips
- 1/4 cup raisins
Instructions
- Preheat oven to 350 degrees. Line a 9x9 pan with parchment paper and set aside.
- Mix first 6 ingredients in a large bowl.
- Stir in remaining ingredients.
- Pour batter into pan in an even layer. Bake for 25-30 minutes, or until golden.
- Let cool and slice into 9 pieces. Drizzle more white chocolate on top, if desired.
- Enjoy!

Amen to that, girls!! Just made this for this week for my mom and me…added 2 scoops of Vital Proteins Marine Collagen, no raisins, pumpkin instead of applesauce, and no white chocolate and it is AMMMMAAAZZZZING!!! My mom said I can make this for her ANYTIME and we both cannot keep our spoons out of the pan! Thank you ladies for yet another wonderful recipe 🙂
