Blender Peanut Butter Banana Protein Pancake Bake
Ingredients
- 2 cups of gluten-free oats
- 1 1/2 cups almond milk or other milk of your choice
- 2 ripe bananas mashed
- 1/4 cup natural peanut butter
- 1-2 scoops PlantFusion vanilla bean protien powder
- 2 Tbsp. pure maple syrup
- 2 tsp. baking powder
- 1/2 cup dark chocolate chips
- sliced banana
Instructions
- Preheat oven to 350 degrees. Spray cooking spray in a casserole dish or 8x8 pan and set aside.
- Place first 7 ingredients in a Vitamix or other high power blender. Blend until batter is smooth.
- Pour batter into pan/dish and add chocolate chips and sliced bananas on top.
- Bake for 40 minutes, or until golden.
- Slice and serve and top, if desired.
- Enjoy!

Ooh, looks so much better than pancakes themselves! I bet blueberries and walnuts would taste amazing in this bake as well. This is totally something I want to try out!
