If you could think of a cake that screams SUMMER, what would you think of? Obviously there’s ice cream cake, but I believe strawberry shortcake is the epitome of an easy summer dessert cake.
A simple vanilla cake base filled with fresh whipped cream and piled with juicy strawberries; How could this get any better?
Let me tell ya friends, if strawberry shortcake was even simpler to make, made single serving and included bloobs in the mix, you’d swoon even more at this dessert. We all know how much I like to share, so hence the reason that I made this classic dessert single serving.😉
Also, I feel like blueberries are just as good (if not better) than strawberries, so they deserve to have time to shine here too.
Everybody has those days when they just need dessert, and they need it NOW and all to themselves. This blueberry strawberry shortcake is for those days, but also for any day. We all know how impatient people are, so we make recipes that fit the needs of these people.
If you have a good 3 minutes on hand, you should go and make this. All you gotta do is mix the ingredients, microwave for 1-2 minutes, slice in half, and top with the coconut cream and berries. No need to make a mess in the kitchen on a hot summer day, thank God!🙌
Blueberry Strawberry Shortcake Mug Cake
This simple easy-to-make Blueberry Strawberry Shortcake Mug Cake uses crushed gluten-free graham crackers and oat flour to create a vanilla-graham flavor that tastes like the classic summer dessert! Filled with whipped coconut cream and fresh summer berries, you won’t believe that its vegan, gluten-free and made in the microwave!
Blueberry Strawberry Shortcake Mug Cake {Vegan + Gluten-Free!}
Ingredients
- Mug CAKE
- 1/4 cup oat flour
- 1
Gluten-Free Graham Cracker Sheet finely crushed - 1/4 tsp baking powder
- 1/8 tsp cinnamon
- 1 egg or flax egg
- 1/2 tbsp maple syrup
- 1 tbsp almond milk
- FILLING + TOPPING
- vanilla greek yogurt/coconut cream
- fresh strawberries and blueberries
- crushed graham crackers
Instructions
- Grease a ramekin/mug with oil/butter.Mix all ingredients for cake in a small bowl and spoon batter into mug. Microwave for 1-1:30 minutes, be careful it doesn't overflow. Let cool than cut in half and serving with filling and toppings.
