I can’t help but continue to make breakfast pizza! It’s just so easy, tasty and a healthy breakfast treat, I can’t stop, it’s an addiction! But today I made a version of my mother’s favorite pie, lemon cream pie with the addition of strawberries! Yum! :) Pizza for breakfast is just so awesome, it’s so much more satisfying when you can eat food with your hands! Not to mention the taste of this pizza, creamy, lemony, and sweetness right at your finger tips!
Strawberry Lemon Cream Pie Breakfast Pizza
Serves 1-2 ( one hungry person )
- 1 cup oats
- 1/4 tsp. vanilla extract
- 1/2 Tbsp. lemon juice
- 1/4 cup apple sauce
- 1 egg ( or flax egg)
Toppings
- 1/2 greek yogurt (vanilla or plain mixed with sweetener)/ soy yogurt
- 1 Tbsp. lemon zest
- 1 Tbsp. crushed walnuts
- 3 Tbsp. sliced strawberries
- Preheat oven to 350 degrees.
- Combine all ingredients in a bowl ( not including toppings). Blend well and spoon into a crust shape onto a cooking sheet lined with parchment paper. Bake for about 10-15 minutes or until oats are done.
- Top with toppings.

I have looked for a recipe for a crust that doesn’t have butter, shortening, or oil for my father in law. I think this one will be perfect! I am going to adapt it a bit to make a pie crust for no sugar added apple pie/tart. He has a very limited diet ( no oils, no dairy, low protein, diabetic ). he LOVES apple pie and I like to give him a semi guilty treat every now and then.
