In the mood for muffins? Make these healthy Strawberry Tahini Crumb Muffins! They’re perfectly sweet without refined sugar. Also Paleo + Vegan friendly!
It’s been a super long time since I made muffins. We’re talking like early January when I made these Buckeye Brownie Banana Muffins, and that is NOT ok. Yes muffin tops have been made recently, but sometimes you just want the whole muffin.
Plus I was craving a bakery-style muffin, ya know, the ones with the crumb topping. Ahhhh the crumbs make it.
Who woulda thought that tahini and strawberries go together so well? It’s an interesting combo to say the least, but it works. If you’ve never had tahini before, you should totally try it because it’s amazing.
These muffins are unique, flavorful and sweet with no refined sugar what-so-ever. They’re pretty bomb in my opinion. Here is what you need:
almond flour
baking soda
tahini
apple sauce
egg or flax egg
maple syrup
strawberries
crumb topping

Strawberry Tahini Crumb Muffins
Ingredients
- 1 cup almond flour
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 cup tahini
- 1/2 cup apple sauce
- 1 egg beaten or flax egg
- 1/4 cup pure maple syrup
- 1 cup sliced strawberries
- Crumb topping
- 1/2 cup almond flour
- 2 Tbsp. coconut oil not melted
- 2 Tbsp. pure maple syrup
Instructions
- Preheat oven to 350 degrees.
- Combine almond flour, baking soda and cinnamon in a large bowl.
- In a separate bowl mix together tahini, apple sauce, egg, and maple syrup until smooth.
- Add wet mixture to dry mixture and mix to form a batter. stir in sliced strawberries.
- Spoon batter 2/3 full into 9-10 lined muffin tins.
- To make crumb topping, place all ingredients in a bowl and mash with a fork until crumbles form. Spoon onto each muffin.
- Bake for 25-30 or until done.
