I was in the mood for waffles this morning because I haven’t had then in forever! I used to make them all the time when I was younger ( using a mix) and I would get a belgian waffle every time I went out to breakfast. The problem was that they did not fill me up at all. Normal waffles lack in fiber, protein, healthy fats and pretty much every nutrient. Not these waffles, full of fiber, hefty in protein and a smidgen of healthy fat to start your day off on the right track. Not to mention all the vitamins, minerals and antioxidants in the lemons, oranges and strawberries used in here!
Lemon–Orange Waffles with Strawberry Maple Cream
Make four 4 inch waffles
- 1 cup GF oat flour
- 1 Tbsp. baking powder
- 3 Tbsp. coconut flour
- 1 Tbsp. coconut oil, melted
- 1 Tbsp. agave/honey
- 1 cup almond milk
- 1 egg, beaten or flax egg (1 Tbsp. flax meal with 3 Tbsp. water)
- 1 Tbsp. orange zest
- 1 Tbsp. lemon juice
- 1 Tbsp. orange juice
Cream
- 1/4 cup pureed strawberries
- 1 Tbsp. maple syrup
- 2 Tbsp. plain soy/greek yogurt
- in a bowl combine oat flour, baking powder and coconut flour.
- Add remaining ingredients and mix well.
- Cook waffles in waffle iron coated with cooking spray. Cook like you would a normal waffle. Repeat with remaining batter.
- For cream, combine all ingredients together than pour over top waffles
- Enjoy!
