Banana Peanut Butter Cheesecake Oatmeal Cups
You can’t go wrong with these Oatmeal Cups as the perfect grab n’ go breakfast, you can even double or triple the recipe and store them in the freezer for those days when you unintentionally have to rush out the door or for a healthy snack!
These are gluten-free, Dairy free and can be vegan
Banana-Peanut Butter Cheesecake Baked Oatmeal Cups
Oatmeal Cups
- 1 cup old fashioned oats
- 1/2 tsp baking powder
- 1 egg (use chia or flax egg to make this vegan)
- 1 ripe banana,mashed
- 1/2 tsp vanilla extract
- 2 tbsp crushed peanuts
1. Preheat oven to 350 degrees and line a muffin pan with muffin liners
2. In a large bowl, mix oats and baking powder together
3. In a small bowl mix together egg, banana, and vanilla and add to dry ingredients
4. Divide half of batter into 4 muffin cups, top with cheese cake mixture, top with rest of batter and sprinkle with chopped peanuts
5. bake for 10-15 minutes, or until done
Cheesecake filling
- 3 tbsp neufchâtel cheese or cream cheese, softened (use tofu cream cheese to make vegan)
- 1.5 tbsp creamy natural peanut butter
- 1/2 tbsp honey/maple syrup
1. Mix all ingredients together well and go to step 4 for oatmeal cups
