Raw Chocolate Blueberry Coconut and Walnut Clusters

  • 1/4 cup unrefined coconut oil (such as Skinny & Co)
  • 1/4 cup cocoa powder
  • 1 1/2 Tbsp. agave nectar/ honey/ maple syrup
  • 3/4 cup blueberries
  • 1 Tbsp. walnuts, chopped
  • 1 Tbsp. shredded unsweetened coconut
  1. Mix together coconut oil, cocoa powder and agave in a bowl.
  2. Add remaining ingredients and combine until ingredients are equally distributed.
  3. Spoon mixture into little muffin liners and place in freezer for 15 minutes to harden.
  4. Enjoy!

Colorful Papaya Avocado Slaw

I love a nice refreshing summer salad.  One with lots of colorful fruit and a light tangy dressing.  I have only tried papaya once and fell in love with its honey-like sweetness at first bite.  It pairs well with the tang from the lemon juice and balsamic vinegar.  This is the perfect picnic salad, with only a few ingredients and takes only a few minutes to assemble.  Make this before summer ends, you will regret it if you don’t!

Colorful Papaya Avocado Slaw

  • 1 10 oz. bag broccoli slaw
  • 1 cup papaya, chopped
  • 1/2 avocado, chopped
  • 1 Tbsp. lemon juice
  • 1/2 Tbsp. balsamic vinegar
  • 2 Tbsp. fresh cilantro, finely chopped
  1. Combine all ingredients in a bowl.  Mix well.
  2. Enjoy!

Chocolate Chip Banana Bread English Muffin!

Banana Bread has to be my all-time favorite quick bread!  I love making it because it’s so easy and delish! I can slice a thick piece and slather it with some peanut butter and I’m out the door in no time!  Luckily I made an even quicker version of the old-time favorite, plus I added chocolate chips!  Chocolate makes everything better and this recipe is no exception!  So easy to make and delicious to eat, you too will be out of the door in record time with a breakfast you will enjoy!

Chocolate Chip Banana Bread English Muffin

  • 1/3 cup oat flour
  • 1 egg white (or flax egg for vegan)
  • 1/2 ripe banana
  • 1/8 tsp. Baking powder
  • 1/4 tsp. Vanilla extract
  • 1/2 Tbsp. Agave/honey/maple syrup
  • 1/8 tsp. Cinnamon
  • 1 Tbsp. Vegan chocolate chips, finely chopped
  1. In a food processor, combine all ingredients but chocolate chips.  Blend for about 30 second, or until mixture is smooth.
  2. Spray cooking spray in a mug and add batter.  Stir in chocolate chips.  Microwave for about 2-2:30 minutes, or until muffin is fully cooked.
  3. Let cool and take out of the mug.  Slice in half and top with peanut butter, or whatever your heart desires.
  4. Enjoy!!

I love pancakes, if you couldn’t tell, especially unique flavors! I love experimenting with different ingredients into these perfect little cakes! I mean, you could really make any flavor you want, pancakes have no limits! That’s what so great about them! You’ve heard of corn bread, you’ve heard of zucchini bread, but how about Zucchini Cornbread Pancakes!? Let me tell you, you don’t know what you are missing! It taste exactly like those two breads combined, sweet, moist, light, and oh so tasty! So healthy and delicious, these babies are irresistible! One bit and you will  wonder why you’ve never had cornbread and zucchini bread combined!

Two Quick Breads combined into Pancakes: Zucchini-Cornbread Pancakes

Ingredients
  

  • 1 cup oat flour
  • 1 tbsp cornmeal
  • 1 small zucchini grated
  • 1/3 cup fresh corn kernels
  • 1 tsp baking powder
  • 1 egg white or flax egg
  • 1 tbsp agave/maple syrup/honey
  • 1 cup almond milk
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract

Instructions
 

  • 1. Place all ingredients in a food processor and blend for about 15 seconds, or until fully combined
  • 2. Heat a griddle/skillet/pan on medium heat and spray with cooking spray
  • 3. Spoon batter on skillet and make about 6-8 pancakes
  • 4. Flip pancakes when golden/done on each side
  • 5. Top with fresh blackberries, yogurt, nuts, chocolate chips or whatever you desire!
  • 6. Enjoy!

I guess the saying “the third times a charm is correct”.  This is the third recipe I tried to make for crepes!  The first two did not turn out well.  One batter was too thick so they were pancakes and the other one was too fragile that each time I tried to flip them over they broke into pieces!  I had enough of these failure recipes, so I bravely and carefully composed this recipe.  And Voila they turned out awesome!! Easy to flip and they smell and taste like delicious coconut!  Plus they are gluten-free and can be made vegan!  This will be your new favorite go-to weekend breakfast!!

Gluten-free Coconut Cinnamon Crepes

  • 1/2 cup oat flour
  • 1 egg (or flax egg for vegan)
  • 1 Tbsp. shredded unsweetened coconut
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. coconut extract
  • 1/4 tsp. cinnamon
  1. Blend all ingredients in a food processor for about 10 seconds (batter should be thin).
  2. Spray cooking spray on a skillet and place on medium heat.
  3. Spread batter thin onto heated skillet.  Cook one one side for about a minute, then slide a spatula under the middle to flip to the other side.  Cook for another minute on the other side.
  4. Repeat with remaining batter.
  5. Top with natural peanut butter, sliced apricots and coconut,  or Lemon-Blueberry Chia Seed Jam (click HERE for recipe),if desired.
  6. Enjoy!

DIY Healthy Gourmet Popcorn: Peanut Butter Chocolate Crunch Popcorn

I have a little bit of magic for you today, something peanut-buttery, Chocolatley, Crunchy,  fluffy in your mouth, and perfectly healthy and clean at the same time.  Can you guess what it is? There, I got ya! You don’t even have a clue, but the answer is my newest creation, Peanut-Butter Chocolate Crunch Popcorn, so decadent, so sweet, so tasty, you wouldn’t even guess that it is sugar-free, preservative-free, all natural, 100% clean, and super-duper simple to make, now that’s magic!

Peanut Butter Chocolate Crunch Popcorn

  • 8 cups freshly popped plain popcorn
  • 2 Tbsp. coconut oil
  • 2 Tbsp. peanut butter
  • 2 Tbsp. slivered almonds

Chocolate drizzle

  • 1 Tbsp. coconut oil
  • 1 Tbsp. cocoa powder
  • 1/2 Tbsp. honey
  1. Melt coconut oil and peanut butter in microwave for about 30 seconds, or until fully melted.
  2. Mix peanut butter mixture  and almonds into popcorn.  Mix thoroughly, or until each piece is evenly coated.
  3. For the chocolate sauce, melt coconut oil in microwave for about 30 seconds, or until fully melted.  Stir in cocoa powder and honey.
  4. Drizzle chocolate on top of popcorn.
  5. Enjoy!

Peach and White Chocolate Granola Bars {Vegan & GF}

 I used to love granola bars as a kid, especially the ones with chocolate chips and drizzled with chocolate!  I always thought them to be healthy, but I soon learned they were full of artificial flavors and added sugar.  I miss them so much though, so I took action and made my own.  These granola bars are even better!  Peach butter and White Chocolate is a to-die-for combination, if you haven’t tried it, you will eventually understand!  No added sugar or processed ingredients in these tasty snacks,only sweetened with Kauffman’s Sugar-free Peach Butter (Click HERE to get your jar)!  These will become your kids new favorite granola bar!

Peachy Keen White Chocolate Granola Bars

  • 1 cup walnuts
  • 1/2 cup raisins
  • 1 cup peach butter (preferably no-sugar added version like Kauffman’s)
  • 1 cup oats
  • 1/2 tsp. cinnamon
  • 1/4 cup vegan white chocolate chips, chopped
  1. Preheat oven to 350 degrees.
  2. In a food processor, add walnuts, raisins and peach butter.  Blend for about 20 seconds, or until nuts are crumbs and raisins are paste-like.
  3. In another bowl combine oats, cinnamon, and white chocolate chips.
  4. Add peach mixture to oat mixture and mix well.
  5. Spray cooking spray in a jelly roll pan.  Add mixture and spread evenly on the bottom of the pan.
  6. Bake for about 25 minutes, or until bars are finished cooking.
  7. Let cool for about 10-15 minutes and slice.  Melt more white chocolate and drizzle on top of bars, if desired.
  8. Enjoy!

Welp, it’s been a hot minute (more like 3 years) since I made these granola bars.  It’s sad to think that I’ve forgotten about them, buttttt at least I remembered now!  Better late than never 😉

Are your store-bought bars not cutting it?  Make these simple, dense and hearty granola bars!  They're soft, chewy and naturally sweet for a perfect snack or breakfast!

Unlike your regular store-bought granola bars, these guys are super dense and hearty.  They’re basically a hybrid between banana nut bread and a chewy granola bar.  No complaining here !

Oh and you know how some granola bars are so hard you almost loose a tooth when you bite into them?  These bars aren’t like that at all.  They’re soft baked but still portable.

They’re super duper easy to make!  Here is what ya need:

bananas

walnuts

raisins

oats

chia seeds

chocolate chips or cocoa nibs

cinnamon

Soft-Baked Banana Nut Granola Bars

Are your store-bought bars not cutting it?  Make these simple, dense and hearty granola bars!  They’re soft, chewy and naturally sweet for a perfect snack or breakfast!

 

 

Banana-Nut Bread Granola Bars {Vegan & GF}

Ingredients
  

  • Banana-Nut Bread Granola Bars
  • 1 cup walnuts
  • 1 cup raisins soaked in water for 2 hours (you could skip this step)
  • 2 ripe bananas
  • 1 cup oats
  • 1/3 cup. chia seeds I used the Chia Co
  • 1/2 tsp. cinnamon
  • 1/4 cup cocoa nibs or chocolate chips

Instructions
 

  • Preheat oven to 350 degrees.
  • In a food processor, combine walnuts, drained raisins, and banana.  Blend for about 15 seconds, or until mixture is smooth.
  • In a seperate bowl, combine remaining ingredients.  Mix well then add banana mixture.  Stir until fully combined.
  • Line an 8x8 pan with parchment paper.  Add batter and spread on bottom of the pan evenly. Top with banana slices, if desired.
  • Bake for about  1 hour, or until bars are toasted.
  • Let cool and slice.
  • Enjoy!!

Tasty Clean-Eating Dessert: Caramel Apple Napoleons

The three best flavor combinations are as follows: Peanut Butter and Chocolate, Blueberry and Lemons, and the best of all, Caramel and apples! I haven’t done a recipe with this amazing combo before so I thought I’d give it a shot! But I wondered, what can I make that is unique, healthy and tasty??? Did some thinking and came up with the idea of incorporating these flavors into a Napoleon-style cake, and boy was that a great idea! A napoleon is like a mini-layered cake, but this one, of course is 100% clean, all-natural, no-sugar-added, and a million percent out-of-this-world delicious! So if your looking to make something sweet,cinnamon, caramel, and crunchy, you’ve got yourself a true winner!

Caramel Apple Napoleons

Crust

  • 2/3 cup oat flour
  • 1/3 cup oats
  • 1/2 tsp. baking powder
  • 1/4 tsp. cinnamon
  • 1 Tbsp. honey/agave nectar
  • 1/2 cup applesauce
  • 1 egg white, whisked (or flax egg for vegan)
  • 1/4 tsp. vanilla extract

Filling

  • 1 small apple, chopped
  • 1/4 tsp cinnamon
  • 1/4 raisins, soaked in water for 2 hours
  • 1/2 greek yogurt/ soy yogurt/coconut cream
  • 1 Tbsp. crushed walnuts
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients for crust in a medium bowl.  Stir well, or until mix is completely combined and smooth.
  3. Spray cooking spray on a jelly roll pan.  Spread crust mixture thin on bottom of pan.Bake for about 20 minutes, or until crust is golden brown.
  4. Combine apple and cinnamon in a small bowl and microwave for about 3 minutes, or until apples are soft.
  5. Drain the raisins and place in a food processor.  Blend for about 30 seconds, or until raisins are a paste.
  6. Let crust cool and cut into 6 even rectangles.
  7. To assemble place on rectangle on the bottom then layer with greek yogurt (about 2 Tbsp.) and apples.  Then top with another rectangle with more greek yogurt and apples.  Then add another rectangle and add caramel (raisins) and walnuts on top.
  8. Repeat with remaining ingredients for the second napoleon.
  9. Enjoy!

You know when you are just thinking about random things and you just have a really good idea pop in your head? Well today was one of those days. I was trying to figure out what to do with the ridiculous amount of tomatoes in my kitchen along with the 1 random avocado hanging out in the fridge. I love salsa, and I absolutely adore guacamole (avocado, enough said) so why not combine them! The result is the most superb and spectacular mexican condiment that you have ever tasted! Along with the crunch of the peppers, this salsamole will stun you! Salsa and guacamole are a perfect match together, it was truly mean’t to be!

Salsamole

  • 1 avocado, mashed
  • 4 tomatoes, finely chopped
  • 2 bell peppers (any color), finely chopped
  • 1 Tbsp. lemon juice
  • salt and pepper
  1. Combine all ingredients in a bowl.  Mix well.
  2. Enjoy!!!
