Chocolate Mint Ice Cream
Method adapted by Chocolate Covered Katie
Serves 1-2 people
- 3/4 cup almond milk
- 1/4 cup yogurt ( plain/greek/soy/regular)
- 1 tsp. peppermint extract
- 1 1/2 Tbsp. cocoa powder
- 1 Tbsp. agave/honey
- pinch of salt
- Combine all ingredients in a blender. Blend for about 15 seconds, or until every thing is fully mixed.
- Pour mixture in a shallow container. Let freeze for a few hours, or until fully frozen.
- Once frozen, take out of container ( microwave for 30 seconds if too frozen) and place in blender for a few seconds, or until mixture softens up.
- Pour back in container and scoop out.
- Enjoy!

Coconut Banana Fritters
Looking for a sweet little dessert that won’t make you feel guilty eating it? Well here it is! Coconut banana fritters are super-easy to make and don’t require much effort. They are very sweet nut contain not added sugar so you won’t have a sugar overload. All natural sweetness is the trick in making this dessert taste amazing! There is no room for artificial ingredients or preservatives in this dessert because they are not needed! These babies are as clean as can be, so there is no guilt when you pop one in your mouth! All you will taste is coconut banana deliciousness!
Coconut Banana Fritters
- 3-4 bananas, sliced ( 3 large or 4 small)
- 2 Tbsp. coconut flour
- 1/2 cup almond-coconut milk( any milk is fine)
- 1/4 tsp. coconut extract
- 1/4 cup shredded unsweetened coconut
- Combine flour, milk and coconut extract in a bowl. Mix well.
- Place coconut on a small plate. Dip banana slices in batter then roll in coconut. Repeat with remaining slices.
- Coat a skillet with coconut oil and place on medium-low heat. Add fritters, flipping to the other side when brown.
- Let cool and Enjoy!

DIY Gourmet Nut Butter: Red Velvet Cookie Butter!
Ingredients
- 1/4 cup natural smooth almond butter or peanut butter
- 1/2 cooked beet skin removed
- 1 tbsp cocoa powder
- 1/4 tsp vanilla extract
- 1/2 tbsp honey/agave/maple syrup
Instructions
- 1. Combine all ingredients in a food processor and blend until smooth, about 1 minute

Salmon Zucchini Burgers
Cookouts are the one of the best things about summer! Juicy burgers, the sunset, the warm weather! I love it all, besides the unhealthiness of the burgers. Most burgers have tons of protein, but a lot of unhealthy fat to go along with it. Thats why I made this burger. Salmon is packed with protein plus healthy fats that are important in maintaining over all health. Why the zucchini you might ask? It gives the burger a nice moist flavor, just like it does in zucchini bread. The result? A delicious satisfying burger you won’t feel guilty about!
Salmon Zucchini Burgers
makes 6 burgers
- 1 3/4 cup canned salmon, drained
- 1 egg
- 1 zucchini, shredded
- 1/2 medium onion, finely chopped
- salt and pepper
- Preheat oven to 350 degrees.
- In a medium bowl combine zucchini, onion and salt and pepper, mix well.
- In a food processor, combine salmon and egg. Blend for about 10 seconds, or until salmon resembles texture of ground meat.
- Add Salmon to zucchini. Mix well using a large spoon or your hands.
- Spray cooking spray on a cooking sheet and form salmon into 6 burgers.
- Bake for about 30 minutes, or until burgers are done.
- Place burgers on a bun, or what ever you would like.
- Enjoy!

Caffeinated Bliss: Banana Java Chip Whoopie Pies
I was trying to think “outside of the box” today, I wanted to make something i’ve never made before. So the first thought that came to mind was Whoopie Pies, and the second thing that I thought of was coffee! So i managed to put two and two together to create a Banana-Java Chip Whoopie Pie! Believe me, they are incredible! The “cookies” taste like chocolate-chip banana bread while the filling had a creamy and rich mocha flavor to it! The flavors complement each other very nicely, you may wonder why you have never have banana, chocolate and coffee all in one, just like I did! Plus these babies are uber healthy for ya, you can have for dessert or breakfast, it doesn’t matter because they will only do your body good!
Banana Java Chip Whoopie Pies
Makes 6 whoopie pies
- 2 cups oat flour
- 1/3 cup brown rice flour
- 2 eggs ( or flax egg)
- 1/4 cup coffee
- 2 tsp. baking powder
- 2 ripe bananas, mashed
- 36 chocolate chips
Filling
- 1 12.3 oz box firm tofu
- 1 Tbsp. coffee granules
- 1 Tbsp. cocoa powder
- 3 Tbsp. agave nectar/honey
- Preheat oven to 350 degrees
- combine all ingredients for the whoopie pies ( excluding chocolate chips). Mix well.
- Line a cooking sheet with parchment paper. Spoon mixture into 12 equal patties ( they should be like cookies). Press 3 chocolate chips onto each pie. Bake for 10 minutes, or until golden.
- For filling, place all ingredients in a food processor. Blend for about 10 seconds, or until mixture is smooth.
- Let cookies cool, then add tofu mixture on top. Sandwich with another cookie. Repeat with remaining ingredients.
- Enjoy!

Strawberry Lemon-Cream Pie Breakfast Pizza
I can’t help but continue to make breakfast pizza! It’s just so easy, tasty and a healthy breakfast treat, I can’t stop, it’s an addiction! But today I made a version of my mother’s favorite pie, lemon cream pie with the addition of strawberries! Yum! :) Pizza for breakfast is just so awesome, it’s so much more satisfying when you can eat food with your hands! Not to mention the taste of this pizza, creamy, lemony, and sweetness right at your finger tips!
Strawberry Lemon Cream Pie Breakfast Pizza
Serves 1-2 ( one hungry person )
- 1 cup oats
- 1/4 tsp. vanilla extract
- 1/2 Tbsp. lemon juice
- 1/4 cup apple sauce
- 1 egg ( or flax egg)
Toppings
- 1/2 greek yogurt (vanilla or plain mixed with sweetener)/ soy yogurt
- 1 Tbsp. lemon zest
- 1 Tbsp. crushed walnuts
- 3 Tbsp. sliced strawberries
- Preheat oven to 350 degrees.
- Combine all ingredients in a bowl ( not including toppings). Blend well and spoon into a crust shape onto a cooking sheet lined with parchment paper. Bake for about 10-15 minutes or until oats are done.
- Top with toppings.

Chai- Spiced Banana Bread Pancakes
I get it, I’m a bit obsessed with pancakes, but there are so many possibilities, so many flavors, i just can’t get over it! So this week’s version of pancakes is something after my own heart, Chai-Banana Bread Pancakes. You may be thinking, yea I love banana bread, but what is chai doing in there? Well my friends, chai does something to these pancakes that is just magical, the spiced tea blends with the banana flavor and gives the pancakes that extra UMPHHH that sets them apart from other pancakes! Banana and Chai are a match made in culinary heaven! So Whip up this batch of unique deliciousness and you will never question the addition of chai and banana ever again.
Chai-Spiced Banana Bread Pancakes
- 2 cups oat flour
- 2 extra ripe bananas
- 2 egg whites or 1 flax egg
- 1 1/2 cups of hot chai tea( just steep a chai tea bag in 1 1/2 cups of hot water for about 3 minutes)
- 1.5 tsp baking powder
- 1 tsp pure vanilla extract
- 1/2 tsp cinnamon
1. Combine all ingredients into a blender and blend until smooth, about 1 minute
2. Heat a griddle/pan on medium heat, spoon pancakes on griddle and flip when golden on each side (makes about 16 pancakes or 4 servings)
3. Let cool and top with banana slices, chocolate chips, maple syrup or whatever you desire

Colorful Papaya Avocado Slaw
I love a nice refreshing summer salad. One with lots of colorful fruit and a light tangy dressing. I have only tried papaya once and fell in love with its honey-like sweetness at first bite. It pairs well with the tang from the lemon juice and balsamic vinegar. This is the perfect picnic salad, with only a few ingredients and takes only a few minutes to assemble. Make this before summer ends, you will regret it if you don’t!
Colorful Papaya Avocado Slaw
- 1 10 oz. bag broccoli slaw
- 1 cup papaya, chopped
- 1/2 avocado, chopped
- 1 Tbsp. lemon juice
- 1/2 Tbsp. balsamic vinegar
- 2 Tbsp. fresh cilantro, finely chopped
- Combine all ingredients in a bowl. Mix well.
