Heavenly Product Review: Halo Top Ice Cream!

Who doesn’t love ice cream??  Yeah Thats right every one does!  But what some of us don’t love is that is does nothing for our bodies, its all empty calories besides the little bit of calcium hidden in it.  Any ways, many of us eat more than a serving, some of us don’t even know what half a cup looks like ( you try to eye ball it, but it is less than you think).  Not to fear though, because there is an ice cream you can feel good about eating, and you could eat the whole pint if you wanted too with feeling guilty.

Low Calorie and Easy to Make Ice Cream: Chocolate Mint Ice Cream

No other dessert beats ice cream on a hot summer’s day.  Whether you are at the beach, the park or sitting on your deck, there really is nothing better.  Mint and chocolate are the all-time best ice cream flavors (in my opinion), and I was thankful enough to receive peppermint extract from Swanson Vitamins!  This ice cream is beyond easy to make and tastes amazing!  And for  only about 130 CALORIES for the WHOLE RECIPE ( using fat-free plain yogurt and unsweetened almond milk), why not!  Try this NOW!!

Chocolate Mint Ice Cream

Method adapted by Chocolate Covered Katie

Serves 1-2 people

  • 3/4 cup almond milk
  • 1/4 cup yogurt ( plain/greek/soy/regular)
  • 1 tsp. peppermint extract
  • 1 1/2 Tbsp. cocoa powder
  • 1 Tbsp. agave/honey
  • pinch of salt
  1. Combine all ingredients in a blender.  Blend for about 15 seconds, or until every thing is fully mixed.
  2. Pour mixture in a  shallow container.  Let freeze for a few hours, or until fully frozen.
  3. Once frozen, take out of container  ( microwave for 30 seconds if too frozen) and place in blender for a few seconds, or until mixture softens up.
  4. Pour back in container and scoop out.
  5. Enjoy!

Coconut Banana Fritters

Looking for a sweet little dessert that won’t make you feel guilty eating it?  Well here it is!  Coconut banana fritters are super-easy to make and don’t require much effort.  They are very sweet nut contain not added sugar so you won’t have a sugar overload.  All natural sweetness is the trick in making this dessert taste amazing!  There is no room for artificial ingredients or preservatives in this dessert because they are not needed!  These babies are as clean as can be, so there is no guilt when you pop one in your mouth!  All you will taste is coconut banana deliciousness!

Coconut Banana Fritters

  • 3-4 bananas, sliced ( 3 large or 4 small)
  • 2 Tbsp. coconut flour
  • 1/2 cup almond-coconut milk( any milk is fine)
  • 1/4 tsp. coconut extract
  • 1/4 cup shredded unsweetened coconut
  1. Combine flour, milk and coconut extract in a bowl.  Mix well.
  2. Place coconut on a small plate.  Dip banana slices in batter then roll in coconut.  Repeat with remaining slices.
  3. Coat a skillet with coconut oil and place on medium-low heat.  Add fritters, flipping to the other side when brown.
  4. Let cool and Enjoy!

DIY Gourmet Nut Butter: Red Velvet Cookie Butter!

Ingredients
  

  • 1/4 cup natural smooth almond butter or peanut butter
  • 1/2 cooked beet skin removed
  • 1 tbsp cocoa powder
  • 1/4 tsp vanilla extract
  • 1/2 tbsp honey/agave/maple syrup

Instructions
 

  • 1. Combine all ingredients in a food processor and blend until smooth, about 1 minute
  • 2. Use this Cookie Butter to spread on bread, pancakes, waffles, crackers, fruit, you name it!
  • 3. Enjoy!

Salmon Zucchini Burgers

Cookouts are the one of the best things about summer!  Juicy burgers, the sunset, the warm weather!  I love it all, besides the unhealthiness of the burgers.  Most burgers have tons of protein, but a lot of unhealthy fat to go along with it.  Thats why I made this burger.  Salmon is packed with protein plus healthy fats that are important in maintaining over all health.  Why the zucchini you might ask?  It gives the burger a nice moist flavor, just like it does in zucchini bread.  The result?  A delicious satisfying burger you won’t feel guilty about!

Salmon Zucchini Burgers

makes 6 burgers

  • 1 3/4 cup canned salmon, drained
  • 1 egg
  • 1 zucchini, shredded
  • 1/2 medium onion, finely chopped
  • salt and pepper
  1. Preheat oven to 350 degrees.
  2. In a medium bowl combine zucchini, onion and salt and pepper, mix well.
  3. In a food processor, combine salmon and egg.  Blend for about 10 seconds, or until salmon resembles texture of ground meat.
  4. Add Salmon to zucchini.  Mix well using a large spoon or your hands.
  5. Spray cooking spray on a cooking sheet and form salmon into 6 burgers.
  6. Bake for about 30 minutes, or until burgers are done.
  7. Place burgers on a bun, or what ever you would like.
  8. Enjoy!

Caffeinated Bliss: Banana Java Chip Whoopie Pies

I was trying to think “outside of the box” today, I wanted to make something i’ve never made before. So the first thought that came to mind was Whoopie Pies, and the second thing that I thought of was coffee! So i managed to put two and two together to create a Banana-Java Chip Whoopie Pie! Believe me, they are incredible! The “cookies” taste like chocolate-chip banana bread while the filling had a creamy and rich mocha flavor to it! The flavors complement each other very nicely, you may wonder why you have never have banana, chocolate and coffee all in one, just like I did! Plus these babies are uber healthy for ya, you can have for dessert or breakfast, it doesn’t matter because they will only do your body good!

Banana Java Chip Whoopie Pies

Makes 6 whoopie pies

  • 2 cups oat flour
  • 1/3 cup brown rice flour
  • 2 eggs ( or flax egg)
  • 1/4 cup  coffee
  • 2 tsp. baking powder
  • 2 ripe bananas, mashed
  • 36 chocolate chips

Filling

  • 1 12.3 oz box firm tofu
  • 1 Tbsp. coffee granules
  • 1 Tbsp. cocoa powder
  • 3 Tbsp. agave nectar/honey
  1. Preheat oven to 350 degrees
  2. combine all ingredients for the whoopie pies ( excluding chocolate chips).  Mix well.
  3. Line a cooking sheet with parchment paper.  Spoon mixture into 12 equal patties ( they should be like cookies).   Press 3 chocolate chips onto each pie.  Bake for 10 minutes, or until golden.
  4. For filling, place all ingredients in a food processor.  Blend for about 10 seconds, or until mixture is smooth.
  5. Let  cookies cool, then add tofu mixture on top.  Sandwich with another cookie.  Repeat with remaining ingredients.
  6. Enjoy!

Strawberry Lemon-Cream Pie Breakfast Pizza

I can’t help but continue to make breakfast pizza! It’s just so easy, tasty and a healthy breakfast treat, I can’t stop, it’s an addiction! But today I made a version of my mother’s favorite pie, lemon cream pie with the addition of strawberries! Yum! :) Pizza for breakfast is just so awesome, it’s so much more satisfying when you can eat food with your hands! Not to mention the taste of this pizza, creamy, lemony, and sweetness right at your finger tips!

Strawberry Lemon Cream Pie Breakfast Pizza

Serves 1-2 ( one hungry person )

  • 1 cup oats
  • 1/4 tsp. vanilla extract
  • 1/2 Tbsp. lemon juice
  • 1/4 cup apple sauce
  • 1 egg ( or flax egg)

Toppings

  • 1/2 greek yogurt (vanilla or plain mixed with sweetener)/ soy yogurt
  • 1 Tbsp. lemon zest
  • 1 Tbsp. crushed walnuts
  • 3 Tbsp. sliced strawberries
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a bowl ( not including toppings).  Blend well and spoon into a crust shape onto a cooking sheet lined with parchment paper.  Bake for about 10-15 minutes or until oats are done.
  3. Top with toppings.

Lemon-Blueberry Larabar Cookie Cups

I am always in need of an afternoon-pick-me-up.  I usually grab a protein bar or granola bar if I know I will be gone awhile.  While bars hold me over when hunger strikes, they aren’t the best thing for me.  I used to eat the “healthy” protein bars that were chocolate covered and contain artificial flavors and ingredients.  How did I not know that these bars had the same nutrition value as a candy bar?  Luckily I was fortunate enough to be send a few flavors of the wonderful Larabars!  All natural ingredients and no artificial flavors in this jam-packed goodness.  They only contain few ingredients, and I can pronounce every single one!  Buy them now and replace them with your go-to snacks.  My favorite flavors are blueberry muffin and chocolate chip cookie dough, but I’m sure all the flavors are just as amazing!

Lemon-Blueberry Larabar Cookie Cups

Makes 2 cookie cups

  • 1 blueberry muffin larabar
  • 3 Tbsp. cashews, soaked in water for at least  1 hour
  • 2 Tbsp. fresh blueberries
  • 1 tsp. lemon juice
  1. Preheat oven to 350 degrees.
  2. spray cooking spray in 2 mini muffin cups.  Cut bar in half and smash one into each muffin cup.  Press down into muffin cup until equal thickness throughout.  Bake for 12 minutes, or until cups become golden.
  3. In a food processor, combine drained cashews, blueberries and lemon juice.  Blend until mixture is smooth.
  4. Take cookie cups out of muffin tin when cooled.  Spoon in cashew mixture. 
  5. Sprinkle lemon zest on top, if desired.
  6. Enjoy!

Chocolate Cream Larabar Cookie Cups

I am always in  need of an afternoon pick-me-up snack, and protein or granola bars seem to do the trick.  However, the ones that I used to eat were dubbed “healthy” but actually contained artificial ingredients and a trans-fatty chocolate coating.  How did I not know these had the nutritional values of a candy bar?  Luckily I was fortunate enough to receive  a few flavors of the amazing larabars!  They contain no artificial ingredients and taste like heaven!  They are non-gmo, gluten-free and nutrient dense.  They contain only a few ingredients, and I can pronounce them all!  Replace them as your new go-to snack. I promise they will keep you full and give you energy until your next meal.  My favorite flavors are chocolate chip cookie dough and blueberry muffin, but I am sure they are all delicious!

Chocolate Cream Larabar Cookie Cups

  • 1 chocolate chip cookie dough larabar
  • 2 Tbsp. cashews, soaked in water for atleast one hour
  • 1 Tbsp. cocoa powder
  • 1 tsp. coconut oil
  • 1/2 tsp. agave nectar
  1. Preheat oven to 350 degrees.
  2. Spray cooking spray into two mini muffin cups .  Split bar in half and press each half into muffin tin until it covers the sides of the cup.  Bake for 12 minutes, or until cups are golden.
  3. In a food processor, combine drained cashews, cocoa powder, oil and agave.  Blend until mixture is smooth.
  4. Take out cookie cups from tin and spoon in cashew mixture, 
  5. Enjoy!

Gluten-free Strawberry Coconut Bread

I LOVE making and eating quick breads!  They are the perfect breakfast, snack and dessert all in one!  There are so many varieties, banana, pumpkin, ginger, carrot, zucchini, you name it, theres a quick bread for that.  Today I wanted to take another route and make a strawberry bread.  But not just a strawberry bread, coconut as well because coconut is good with almost any thing.  This loaf is beautiful, not just the pink color but the taste as well.  You will not believe that its gluten-free and has no added sugar!

Gluten-free Strawberry Coconut Bread

  • 1 cup strawberries, chopped
  • 2 egg whites (flax eggs for vegan)
  • 1/2 cup applesauce
  • 1 Tbsp. unrefined coconut oil ( such as Skinny & Co)
  • 1/4 tsp. coconut extract
  • 1 Cup brown rice flour
  • 1 Tbsp. chia seeds
  • 1/4 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 Tbsp. Toasted unsweetened coconut
  1.  Pre heat oven to 350 degrees.
  2. In a food processor, combine strawberries, egg whites, applesauce, coconut oil and coconut extract. Blend for about 20 seconds, or until mixture is smooth.
  3. In a separate bowl, combine flour, chia seeds, cinnamon and baking powder. Mix well.
  4. Add strawberry mixture to flour mixture and mix well.
  5. Spray cooking spray in a loaf pan and add batter. Top with toasted coconut and bake for about 20 minutes, or until bread is finished.
  6. Let cool for about 15 minutes and take out of loaf pan.
  7. Slice and Enjoy!

Serves 6-8
