Yay it’s peppermint season! I love the peppermint + chocolate combo because you get that minty fresh and decadent chocolate feel all in one bite.
These brownies really hit the spot if you love the combo like I do. They’re extremely fudgey and dense (like a brownie should be) and really simple to make.
I partnered with Kimberton Whole Foods and used the following ingredients that are currently on sale in their store right now: Wholesome Candy Canes, Tony’s Chocolate Bars, Frontier Co-op Peppermint Flavor and Equal Exchange Organic Baking Cocoa. If you live in PA, I 10/10 recommend checking KWF out for your own good! They got a great selection of healthy, organic foods!
Back to the Recipe………….Here is what you need to make these healthy flourless peppermint brownies:
almond butter (or other nut butter)
maple syrup
egg or flax egg
coconut oil
peppermint extract
cocoa powder
baking soda
candy canes
melted chocolate
Flourless Peppermint Brownies {Paleo, Vegan-option, Gluten-free, Grain-free, Dairy-free}
Ingredients
- 1 cup almond butter
- 1/4 cup pure maple syrup
- 1 egg beaten
- 1/4 cup coconut oil melted
- 2 tsp. peppermint extract
- 1/3 cup cocoa powder
- 1/2 tsp. baking soda
- 4 candy canes crushed
- TOPPING optional
- melted chocolate
- crushed candy canes
Instructions
- Preheat oven to 350 degrees.
- Combine first 5 ingredients together in a large bowl until mixture is smooth. Add in cocoa and baking soda and mix well. Stir in crushed candy canes.
- Coat a baking pan with coconut oil or cooking spray and spoon in batter. Smooth out the top so batter is even throughout.
- Bake for 25-30 minutes, or until done.
- Let cool, then drizzle on melted chocolate and top with crushed candy canes.
- Slice into 9 brownies.
- Enjoy!
