Apple Pie Breakfast Pizza

What’s not to love about apple pie? I mean, the soft, cinnamon and sweet apples with a crunchy golden crust, pure bliss. But all of the sugar, fat, and calories are a big no-no in my book, so why not enjoy the taste of apple pie with real cooked apples with cinnamon on top of a breakfast pizza? Life just got so much more exciting! It’s love at first bite, so sweet, soft, and tasty, the way apple pie should be on top of a chewy, golden oatmeal crust. All natural, all good, all tasty, which is everything you could imagine and more!

Apple Pie Breakfast Pizza

Print Recipe

Ingredients
  

  • Apple Pie Breakfast Pizza
  • 1 cup oats
  • 1 egg of flax egg
  • 1/4 cup apple sauce
  • 1/8 tsp. vanilla extract
  • 1/4 tsp. cinnamon
  • Toppings
  • 1 apple sliced and baked in microwave with cinnamon
  • 1 Tbsp. chopped walnuts
  • 2 Tbsp. greek yogurt/ soy yogurt

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine ingredients except toppings in a bowl. Blend well and place on a cooking sheet lined with parchment paper. Spoon into a circle pizza crust shape. Bake for 10-15 minutes, or until crust is done.
  • Add toppings onto crust.
  • Enjoy!

Strawberry Chocolate Mousse Oatmeal

Chocolate is great, Strawberries are tasty, but you know whats even better? When they are combined into a delicious, creamy and sweet breakfast! This hearty breakfast is a take on a favorite dessert, chocolate mousse! Yes there is avocado in it, but you can’t taste it, it’s just there to make the oatmeal extra thick and crispy with added antioxidants! You can literally have chocolate mousse for breakfast anyway and still be eating clean and healthy! Full of vitamins, minerals, healthy fats and filling fiber, this breakfast will trick your mind into thinking that you are eating a decadent dessert, but your body will now the truth! So if you want to nourish your body but don’t want to give up on your sweet tooth, this is the perfect breakfast for you!

Strawberry Chocolate Mousse Oatmeal

  • 1/2 cup oats, cooked in water/almond milk
  • 1 1/2 Tbsp. avocado
  • 3 Tbsp. chopped strawberries
  • 1 tsp. unrefined coconut oil (like Skinny & Co)
  • 1 Tbsp. cocoa powder
  • 1 1/2 tsp. maple syrup/ agave/honey
  1. Place avocado, strawberries, coconut oil, cocoa powder and maple syrup in a food processor.  Blend for about 20 seconds, or until mixture is smooth.
  2. Add strawberry mixture to cooked oats.  Stir well, or until mixture is equally distributed.
  3. Top with more strawberries and cocoa nibs, if desired.
  4. Enjoy!

Pancake Mix Apple Cinnamon Rolls

Making Cinnamon Rolls just got a whole lot easier and tastier with these #healthy Pancake Mix Apple Crumble Cinnamon Rolls!

I’ve been longing to make healthy cinnamon rolls for a while.  After I was lucky to receive the amazing Kodiak pancake mix (Product Review Coming Soon!), I knew this was my calling.  Using this amazing mix for baking is incredibly easy!  It’s not just for pancakes and waffles, you can literally bake anything with this, cakes, cookies, cinnamon rolls, you name it!  These cinnamon rolls are the perfect fall breakfast/dessert!  Its basically like cinnamon rolls and apple crumble fell in love and had a baby!  But don’t feel guilty eating these, they are refined sugar-free and healthy!

Apple Crumble Cinnamon Rolls

  • 3 cups any flavor kodiak cakes pancake/waffle mix (I used whole wheat oat and honey)
  • 1 egg, beaten or flax egg for vegan
  • 3/4 cup non-dairy milk
  • 1/4 tsp. vanilla extract

Filling

  • 1 apple, finely chopped
  • 1 Tbsp. coconut sugar
  • 1/2 tsp. cinnamon
  • 2 Tbsp. coconut oil
  • 1 Tbsp. coconut sugar
  • 1/4 tsp. cinnamon

Crumble Topping

  • 1/2 cup oats
  • 1/2 apple finely chopped
  •  1/2 Tbsp. agave/ honey/maple syrup
  • 1/2 Tbsp. coconut sugar
  1. Preheat oven to 375 degrees.
  2. In a large bowl combine pancake mix, egg, milk and vanilla.  Mix well until a dough forms.
  3. In a separate bowl, combine chopped apple, 1 Tbsp. coconut sugar and 1/2 tsp. cinnamon.
  4. Turn dough onto lightly floured surface (you can use pancake mix) and  knead lightly.
  5. Use a rolling pin to roll out dough into an  even large rectangle .
  6. Spread coconut oil, remaining coconut sugar and cinnamon on one side of rolled out dough.
  7. Add Filling, making sure to spread evenly throughout.
  8. Roll dough tightly and cut into 12-16 pieces.
  9. Spray cooking spray on a baking sheet and add rolls.
  10. For crumble, combine all ingredients in a bowl and spread over top rolls.
  11. Bake for about 25-30 minutes or until done.
  12. Enjoy!

Sweet Potato “Egg” Muffins

Today for breakfast I wasn’t in the normal “sweet-tooth” mood that I usually am in, I wanted something savory in muffin-form! So what better to make than an “egg” muffin, meaning tofu instead of real eggs for all those vegans out there. These did just the trick to quiet my early-morning hunger! You can totally substitute real eggs though, it would be just as tasty! These muffins are very satisfying and filled with lean protein as well as veggies! Perfect for an on-the-go kind of morning if these are made-ahead and stored in the fridge or freezer!

Sweet Potato “Egg” Muffins

  • 1 large sweet potato, baked and peeled
  • 1 12 0z. block of silken tofu
  • 1 tomato, chopped
  • 1 cup spinach
  • 2 Tbsp. fresh basil, chopped
  • 1/4 tsp. paprika
  • salt and pepper
  1. Preheat oven to 350 degrees.
  2.  Cut sweet potato in fifths. Spray cooking spray in 5 muffin tins. Press each piece of sweet potato into one muffin cup.  Press down with a fork until each piece covers the bottom and sides.
  3. Bake for about 20 minutes, or until sweet potatoes become browned.
  4. In a food processor, combine tofu, spinach, basil, paprika, salt and pepper.  Blend for about 20 seconds, or until mixture is smooth.
  5. stir in chopped tomatoes.  Add mixture to sweet potato cups and bake for another 15 minutes.

New York Naturals Kale Chips Product Review!

Man oh man do I love kale chips!  Like potato chips they are so addicting, but unlike potato chips they are actually healthy!  I was extremely lucky to receive a package full of New York Natural’s Products!  So many different flavors of  chips, crackers, granola and cookies all made with kale! These products are handmade with the highest quality ingredients! I love that this company takes Kale to a whole new level! Kale has never tasted so good! They are all raw, vegan, kosher, dairy-free, gluten-free and Paleo friendly and are made by dehydrating slowly at below 115 degrees so they are packed with enzymes and nutrients!  All of their products are high in vitamin K and A, iron and fiber as well as extremely delicious!

Heres what I recieved!

  • 4 containers of Kale chips
  • 4 containers of Greenola
  • 2 bags of Kale Crackers
  • 2 Kale Cookies

Kale Chips

  • Bombay Ranch: My favorite, has the most perfect “ranch” flavor. I actually prefer these over the potato chip version!
  • Vegan Cheese: Love that this actually has a great cheesy flavor, thanks to nutritional yeast! love the crunch!
  • Spicy Miso: I really enjoyed this unique flavor! It has just the right amount of spice, making it easy to handle. Totally delicious!
  • Sea Salt and Vinegar: This one is such a classic! A perfect healthy substitute for sea salt and vinegar potato chips. I would actually prefer these over the potato chips! They are that good! 🙂

I am so glad that I can actually pronounce all of the ingredients of these!  It’s only made with natural wholesome ingredients which transfer into the amazing flavors of each type! I love that I am getting vital nutrients into my body while enjoying a delicious snack!

Greenola: Pretty much Granola made with kale instead of oats, don’t be fooled, its insanely delicious!

  • Spirulina Crunch: Made with spirulaina and contains pineapple, coconut and sunflower seeds! I love this combo, it’s very uniques
  • Cranberry Nut Crunch: Talk about huge clusters of granola! This one contains massive clusters with cranberries and walnuts, I loved sprinkling this on my yogurt! This was my fav!
  • Raisin Coconut: This one was extremely delicious, I loved the combo of all of the nuts and seeds in this! Perfect for an on-the-go breakfast or snack! This one contains cashews, almonds, walnuts, pumpkin seeds and sesame seeds!
  • Cherry Chia: I loved the cherry flavor in this one! I love how there are big pieces of dried cherries as well as chia seeds for extra crunch!

Again, I am extremely impressed with all of the ingredients, perfect fueling whole ingredients that will only do your body good! This list can’t be beat!

Cheezy Dill: These were amazing! I love the strong cheese flavor which was balanced out by a subtle hint of dill!

Sweet Chipotle: Loved these so much! I love the slightly spicy heat of the chipotle! The flavor was strong, but not over-powereing! These were my favorite!

Kale Cookies

Don’t freak out, these tasted great! I didn’t think kale would taste good in a cookie, but I was pleasantly surprised! Loved the surplus of chocolate chip and raisins in these! Made with simple and whole ingredients, you can have your cookie and eat it too! 🙂

Nutty Chocolate Chip Pumpkin Breakfast Bake

No it’s not oatmeal, no it’s not pumpkin bread, it’s called a Pumpkin Breakfast Bake. A happy medium between the 2 favorites of mine, perfect for this fall weather and the upcoming pumpkin craze. It’s everything pumpkin bread is, fluffy, hearty, and delicious, with an extra “oomph” of the chocolate chips and crunchy nuts! I’ll admit it, Im a huge fan of pumpkin, I have it year-round, not just in autumn. If you want the taste of pumpkin bread but you don’t have the patience for baking it, make this single serving chocolate chip pumpkin bread in a mug and it will satisfy your cravings, trust me.

Nutty Chocolate Chip Pumpkin Bread Breakfast Bake

  • 1/3 cup oats
  • 2.5 tbsp coconut flour
  • 1 egg white or flax egg
  • 3 Tbsp. canned Pumpkin
  • 3/4 cup water or almond milk
  • 1/4 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp chocolate chips
  • 1 tbsp crushed nuts (i used a mixture of almonds, pistachios, cashews and pecans!)

1. Mix everything together in a bowl and microwave for about 3-5 minutes, or until all water is absorbed. 2. Top with more nuts and chocolate chips if desired! 3. Enjoy!

Coconut Banana Fritters

Looking for a sweet little dessert that won’t make you feel guilty eating it?  Well here it is!  Coconut banana fritters are super-easy to make and don’t require much effort.  They are very sweet nut contain not added sugar so you won’t have a sugar overload.  All natural sweetness is the trick in making this dessert taste amazing!  There is no room for artificial ingredients or preservatives in this dessert because they are not needed!  These babies are as clean as can be, so there is no guilt when you pop one in your mouth!  All you will taste is coconut banana deliciousness!

Coconut Banana Fritters

  • 3-4 bananas, sliced ( 3 large or 4 small)
  • 2 Tbsp. coconut flour
  • 1/2 cup almond-coconut milk( any milk is fine)
  • 1/4 tsp. coconut extract
  • 1/4 cup shredded unsweetened coconut
  1. Combine flour, milk and coconut extract in a bowl.  Mix well.
  2. Place coconut on a small plate.  Dip banana slices in batter then roll in coconut.  Repeat with remaining slices.
  3. Coat a skillet with coconut oil and place on medium-low heat.  Add fritters, flipping to the other side when brown.
  4. Let cool and Enjoy!

Caffeinated Bliss: Banana Java Chip Whoopie Pies

I was trying to think “outside of the box” today, I wanted to make something i’ve never made before. So the first thought that came to mind was Whoopie Pies, and the second thing that I thought of was coffee! So i managed to put two and two together to create a Banana-Java Chip Whoopie Pie! Believe me, they are incredible! The “cookies” taste like chocolate-chip banana bread while the filling had a creamy and rich mocha flavor to it! The flavors complement each other very nicely, you may wonder why you have never have banana, chocolate and coffee all in one, just like I did! Plus these babies are uber healthy for ya, you can have for dessert or breakfast, it doesn’t matter because they will only do your body good!

Banana Java Chip Whoopie Pies

Makes 6 whoopie pies

  • 2 cups oat flour
  • 1/3 cup brown rice flour
  • 2 eggs ( or flax egg)
  • 1/4 cup  coffee
  • 2 tsp. baking powder
  • 2 ripe bananas, mashed
  • 36 chocolate chips

Filling

  • 1 12.3 oz box firm tofu
  • 1 Tbsp. coffee granules
  • 1 Tbsp. cocoa powder
  • 3 Tbsp. agave nectar/honey
  1. Preheat oven to 350 degrees
  2. combine all ingredients for the whoopie pies ( excluding chocolate chips).  Mix well.
  3. Line a cooking sheet with parchment paper.  Spoon mixture into 12 equal patties ( they should be like cookies).   Press 3 chocolate chips onto each pie.  Bake for 10 minutes, or until golden.
  4. For filling, place all ingredients in a food processor.  Blend for about 10 seconds, or until mixture is smooth.
  5. Let  cookies cool, then add tofu mixture on top.  Sandwich with another cookie.  Repeat with remaining ingredients.
  6. Enjoy!

Strawberry Lemon-Cream Pie Breakfast Pizza

I can’t help but continue to make breakfast pizza! It’s just so easy, tasty and a healthy breakfast treat, I can’t stop, it’s an addiction! But today I made a version of my mother’s favorite pie, lemon cream pie with the addition of strawberries! Yum! :) Pizza for breakfast is just so awesome, it’s so much more satisfying when you can eat food with your hands! Not to mention the taste of this pizza, creamy, lemony, and sweetness right at your finger tips!

Strawberry Lemon Cream Pie Breakfast Pizza

Serves 1-2 ( one hungry person )

  • 1 cup oats
  • 1/4 tsp. vanilla extract
  • 1/2 Tbsp. lemon juice
  • 1/4 cup apple sauce
  • 1 egg ( or flax egg)

Toppings

  • 1/2 greek yogurt (vanilla or plain mixed with sweetener)/ soy yogurt
  • 1 Tbsp. lemon zest
  • 1 Tbsp. crushed walnuts
  • 3 Tbsp. sliced strawberries
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a bowl ( not including toppings).  Blend well and spoon into a crust shape onto a cooking sheet lined with parchment paper.  Bake for about 10-15 minutes or until oats are done.
  3. Top with toppings.

Lemon-Blueberry Larabar Cookie Cups

I am always in need of an afternoon-pick-me-up.  I usually grab a protein bar or granola bar if I know I will be gone awhile.  While bars hold me over when hunger strikes, they aren’t the best thing for me.  I used to eat the “healthy” protein bars that were chocolate covered and contain artificial flavors and ingredients.  How did I not know that these bars had the same nutrition value as a candy bar?  Luckily I was fortunate enough to be send a few flavors of the wonderful Larabars!  All natural ingredients and no artificial flavors in this jam-packed goodness.  They only contain few ingredients, and I can pronounce every single one!  Buy them now and replace them with your go-to snacks.  My favorite flavors are blueberry muffin and chocolate chip cookie dough, but I’m sure all the flavors are just as amazing!

Lemon-Blueberry Larabar Cookie Cups

Makes 2 cookie cups

  • 1 blueberry muffin larabar
  • 3 Tbsp. cashews, soaked in water for at least  1 hour
  • 2 Tbsp. fresh blueberries
  • 1 tsp. lemon juice
  1. Preheat oven to 350 degrees.
  2. spray cooking spray in 2 mini muffin cups.  Cut bar in half and smash one into each muffin cup.  Press down into muffin cup until equal thickness throughout.  Bake for 12 minutes, or until cups become golden.
  3. In a food processor, combine drained cashews, blueberries and lemon juice.  Blend until mixture is smooth.
  4. Take cookie cups out of muffin tin when cooled.  Spoon in cashew mixture. 
  5. Sprinkle lemon zest on top, if desired.
  6. Enjoy!
