Cinnamon Apple Flaxseed Bread
Apples taste the best during the fall season, so what to do with a surplus stash of them? Make this bread. Made entirely of ground flaxseed, this bread has an amazing nutritional status, full of fiber and healthy fats, not to mention gluten-free and clean. Cinnamon and chopped up apples really make this bread taste like fall! You have to make this! Have it with peanut butter for breakfast, topped with coconut cream for dessert, or simply for an afternoon snack!
Cinnamon-Apple Flaxseed Bread (adapted from The Healthful Pursuit)
- 2 cups ground flaxseed
- 1 tsp baking soda
- 4 eggs or 2 eggs and 3 egg whites
- 1/4 cup honey
- 1 tbsp cinnamon
- 1/2 tsp vanilla
- 3 tbsp coconut oil, melted
- 1/2 cup water
- 1 apple, finely chopped
- 2 tbsp coconut sugar
1. In a medium sized bowl, mix together ground flaxseed and baking soda 2. Add in eggs and mix throughly 3. Add in the rest of the ingredients except coconut sugar and combine well 4. Coat a loaf pan with cooking spray and place oven at 350 degrees 5. Place batter in pan and sprinkle the top evenly with coconut sugar 6. Bake for 20-25 minutes, or until top is golden brown.

Pancake Mix Apple Cinnamon Rolls
Making Cinnamon Rolls just got a whole lot easier and tastier with these #healthy Pancake Mix Apple Crumble Cinnamon Rolls!
I’ve been longing to make healthy cinnamon rolls for a while. After I was lucky to receive the amazing Kodiak pancake mix (Product Review Coming Soon!), I knew this was my calling. Using this amazing mix for baking is incredibly easy! It’s not just for pancakes and waffles, you can literally bake anything with this, cakes, cookies, cinnamon rolls, you name it! These cinnamon rolls are the perfect fall breakfast/dessert! Its basically like cinnamon rolls and apple crumble fell in love and had a baby! But don’t feel guilty eating these, they are refined sugar-free and healthy!
Apple Crumble Cinnamon Rolls
- 3 cups any flavor kodiak cakes pancake/waffle mix (I used whole wheat oat and honey)
- 1 egg, beaten or flax egg for vegan
- 3/4 cup non-dairy milk
- 1/4 tsp. vanilla extract
Filling
- 1 apple, finely chopped
- 1 Tbsp. coconut sugar
- 1/2 tsp. cinnamon
- 2 Tbsp. coconut oil
- 1 Tbsp. coconut sugar
- 1/4 tsp. cinnamon
Crumble Topping
- 1/2 cup oats
- 1/2 apple finely chopped
- 1/2 Tbsp. agave/ honey/maple syrup
- 1/2 Tbsp. coconut sugar
- Preheat oven to 375 degrees.
- In a large bowl combine pancake mix, egg, milk and vanilla. Mix well until a dough forms.
- In a separate bowl, combine chopped apple, 1 Tbsp. coconut sugar and 1/2 tsp. cinnamon.
- Turn dough onto lightly floured surface (you can use pancake mix) and knead lightly.
- Use a rolling pin to roll out dough into an even large rectangle .
- Spread coconut oil, remaining coconut sugar and cinnamon on one side of rolled out dough.
- Add Filling, making sure to spread evenly throughout.
- Roll dough tightly and cut into 12-16 pieces.
- Spray cooking spray on a baking sheet and add rolls.
- For crumble, combine all ingredients in a bowl and spread over top rolls.
- Bake for about 25-30 minutes or until done.
- Enjoy!

WIAW: Why I eat healthy
So this WIAW post is a tad different then the norm. Why you ask? Because I feel the need to explain to people why I eat the way I do.
So Why Do You Eat Healthy??
1. Well, it’s sorta simple, because eat healthy makes me feel good. Sure I can have a bowl of ice cream now and then, but after eating it I feel disgusting. I would much rather eat a giant bowl of plain greek yogurt with a spoonful of pumpkin, cottage cheese and natural PB and in my opinion it tastes much better!
2.Because I eat so healthy, I have so much more energy than I did before. It’s crazy how much different I feel, from always being tired from processed foods, to have tons of energy with whole unprocessed foods! I feel so much stronger than ever before!
3. This may seem weird but I don’t crave unhealthy foods! Seeing a commercial for McDonalds makes me want to through up! I actually crave healthy unprocessed foods like broiled salmon or roasted butternut squash! And believe it or not, there are times that I crave vegetables (yes you read that right) like roasted brussel sprouts and steamed broccoli.
4. I love how I eat and I don’t care what people think! You can judge me all you want!

Sweet Potato “Egg” Muffins
Today for breakfast I wasn’t in the normal “sweet-tooth” mood that I usually am in, I wanted something savory in muffin-form! So what better to make than an “egg” muffin, meaning tofu instead of real eggs for all those vegans out there. These did just the trick to quiet my early-morning hunger! You can totally substitute real eggs though, it would be just as tasty! These muffins are very satisfying and filled with lean protein as well as veggies! Perfect for an on-the-go kind of morning if these are made-ahead and stored in the fridge or freezer!
Sweet Potato “Egg” Muffins
- 1 large sweet potato, baked and peeled
- 1 12 0z. block of silken tofu
- 1 tomato, chopped
- 1 cup spinach
- 2 Tbsp. fresh basil, chopped
- 1/4 tsp. paprika
- salt and pepper
- Preheat oven to 350 degrees.
- Cut sweet potato in fifths. Spray cooking spray in 5 muffin tins. Press each piece of sweet potato into one muffin cup. Press down with a fork until each piece covers the bottom and sides.
- Bake for about 20 minutes, or until sweet potatoes become browned.
- In a food processor, combine tofu, spinach, basil, paprika, salt and pepper. Blend for about 20 seconds, or until mixture is smooth.
- stir in chopped tomatoes. Add mixture to sweet potato cups and bake for another 15 minutes.

New York Naturals Kale Chips Product Review!
Man oh man do I love kale chips! Like potato chips they are so addicting, but unlike potato chips they are actually healthy! I was extremely lucky to receive a package full of New York Natural’s Products! So many different flavors of chips, crackers, granola and cookies all made with kale! These products are handmade with the highest quality ingredients! I love that this company takes Kale to a whole new level! Kale has never tasted so good! They are all raw, vegan, kosher, dairy-free, gluten-free and Paleo friendly and are made by dehydrating slowly at below 115 degrees so they are packed with enzymes and nutrients! All of their products are high in vitamin K and A, iron and fiber as well as extremely delicious!

- Bombay Ranch: My favorite, has the most perfect “ranch” flavor. I actually prefer these over the potato chip version!

- Spicy Miso: I really enjoyed this unique flavor! It has just the right amount of spice, making it easy to handle. Totally delicious!
- Sea Salt and Vinegar: This one is such a classic! A perfect healthy substitute for sea salt and vinegar potato chips. I would actually prefer these over the potato chips! They are that good! 🙂
I am so glad that I can actually pronounce all of the ingredients of these! It’s only made with natural wholesome ingredients which transfer into the amazing flavors of each type! I love that I am getting vital nutrients into my body while enjoying a delicious snack!
Greenola: Pretty much Granola made with kale instead of oats, don’t be fooled, its insanely delicious!
- Spirulina Crunch: Made with spirulaina and contains pineapple, coconut and sunflower seeds! I love this combo, it’s very uniques
- Cranberry Nut Crunch: Talk about huge clusters of granola! This one contains massive clusters with cranberries and walnuts, I loved sprinkling this on my yogurt! This was my fav!
- Raisin Coconut: This one was extremely delicious, I loved the combo of all of the nuts and seeds in this! Perfect for an on-the-go breakfast or snack! This one contains cashews, almonds, walnuts, pumpkin seeds and sesame seeds!
- Cherry Chia: I loved the cherry flavor in this one! I love how there are big pieces of dried cherries as well as chia seeds for extra crunch!
Again, I am extremely impressed with all of the ingredients, perfect fueling whole ingredients that will only do your body good! This list can’t be beat!
Kale Crackers

Cheezy Dill: These were amazing! I love the strong cheese flavor which was balanced out by a subtle hint of dill!
Sweet Chipotle: Loved these so much! I love the slightly spicy heat of the chipotle! The flavor was strong, but not over-powereing! These were my favorite!

Kale Cookies
Don’t freak out, these tasted great! I didn’t think kale would taste good in a cookie, but I was pleasantly surprised! Loved the surplus of chocolate chip and raisins in these! Made with simple and whole ingredients, you can have your cookie and eat it too! 🙂
Chocolate Chip: Soft and fluffy texture! Lots of chocolate chips! perfectly sweetened! Loved the crunch of the nuts
Oatmeal Raisin: Lots of raisin! perfectly sweetened, liked the crunch of walnuts and cashews as well as the hint of cinnamon!

Now lets get this straight, I’m never one to rely on frozen meals for a quick and easy dinner. They usually pack unnecessary added sugar, sodium and lots of ingredients I can’t pronounce. However when the folks at EVOL sent me some of their products I immediately became hooked! I mean like how can you go wrong with burritos and guac? Their food is so tasty and so satisfying! Not to mention al the ingredients are natural and are packed with beneficial macros! Let me break it down:
Chicken Fajita Burrito plus Guacamole (gluten-free):Fire grilled white meat chicken, roasted peppers & onions, rice, black beans, cheddar cheese, roasted corn and an authentic tomato salsa–All hand rolled together in an insanely tasty flour tortilla
Taste: Move over chipotle! This beauty tastes so fresh and amazing, I can’t believe it was frozen! The side of guac definitely makes the meal!
Nutrition Facts: 260 calories, 7 grams of fat, 11 grams of fiber, 9 grams of protein and 1 gram of sugar per serving. Pretty impressed!

Kodiak Cakes Product Review + Cinnamon Roll Recipe
One of the most fond memories I have when I was younger was making pancakes for breakfast using bisquick baking mix. Its so much easier and quicker than making pancakes from scratch! However, because of the added preservatives and trans fats in bisquick, my mom stopped it. Since then I have been making them using my go-to recipe, which actually requires some work (not complaining though, they taste great!). But there are just those days when you don’t feel like getting the kitchen dirty and doing tons of dishes. Thankfully, I was sent three boxes of the amazing Kodiak Cakes mix! This is a pancake/waffle mix that is all natural, full of whole grains, has no added fat, sugar or cholesterol! All the ingredients are clean and minimally processed, not to mention they taste great! Here are the flavors I received:
Whole Wheat Oat and Honey Frontier Flapjack and Waffle Mix:
Taste: Love this flavor and its texture; so light and fluffy its hard to imagine that all you did was add water! Love that the honey flavor comes through slightly, not too sweet but just enough! Also super filling because of the whole grains!
Nutrition Facts: 130 calories, 1 gram of fat, 4 grams of fiber, 2 grams of sugar and 7 grams of protein per serving.

WIAW: Cranberry-Pumpkin Butter
Breakfast: My most favorite combo of oats, pumpkin, coconut flour, egg whites, chocolate chips, nuts and of course peanut butter!
Lunch: So glad I got to go to Panera, seriously love that place! Got the usual: Thai Chopped Chicken Salad with an apple
Dinner: Went out again for dinner (twice in one day never happens!) at the cheesecake factory. Kept it nice and simple and ordered the Tuna Takita Salad which come with ahi-seared tuna! It was SO GOOD!
Snacks: I had some pumpkin spice chobani with some almond butter and some chopped peanuts! Also had a rice cake smothered in Pumpkin Cranberry Butter!
