Happy new year! Today I introduce to you the crunchiest, clustery, and most chocolatley granola that we have ever made. It is safe to say that we are obsessed. The secret to super crunch factor of this granola is that it is made of nuts, not oats.
Fun fact, we were actually going to call this Nutella granola, because it sure does taste like it when you use hazelnuts but we wanted to make the choice of nuts up to you! So you can use two cups of any type of nut you would like!
We have been eating this all week, either by the handful in yogurt, in a smoothie bowl or ice cream. What ever way you eat it, you cannot go wrong! Enjoy!

Substitutions for Paleo Granola:
Nuts: Feel free to omit cashews or hazelnuts and use 2 cups of your favorite nuts, such pecans or almonds, etc.
Dark Cocoa Powder: You can simply omit this if you don’t have it on hand.
How to Store Paleo Chocolate Granola
Store in the fridge for up to 4 weeks!

Paleo Chocolate Granola
Ingredients
- 1 cup cashews
- 1 cup hazelnuts toasted
- 1 1/2 cups unsweetened coconut flakes
- 3 tbsp coconut oil melted
- 1/3-1/2 cup chocolate chips melted
- 1-2 tbsp dark cocoa powder
Instructions
- Preheat oven to 350 and cover a baking sheet with parchment paper.
- Add nuts and coconut in a food processor, pulse into nuts are in small pieces but not like meal-form.
- Add to a large bowl and mix in melted coconut oil and melted chocolate, combine well.
- Add in dark cocoa powder and mix well. Spread evenly on pan and bake for 15-18 minutes.
