These Pancake Mix Chocolate Gingerbread Muffins are a great healthy breakfast or snack during the holiday season! Vegan + gluten-free friendly!
I swear every other recipe I post is a creation made with pancake mix. It’s my go-to flour because I don’t need to worry about adding baking powder/soda (it’s already in the mix) and it’s so versatile.
Today we’ve got muffins for ya! We actually don’t even have a pancake mix muffin recipe on the blog, so this is a first.
Chocolate + gingerbread may seem like a weird combo, but let me tell you that they go very well together.
The addition of the dark chocolate chunks makes it even THAT much better. Well, chocolate makes everything better in my opinion.
Alright, enough with my ramblings………
Here is what you need to make the recipe:
pancake mix
cocoa
applesauce
molasses
milk
dark chocolate chunks
gingerbread spice
Chocolate Gingerbread Pancake Mix Muffins
Ingredients
- 2 cups complete pancake mix (can use Gluten-free mix)
- 1/4 cup dark cocoa powder
- 1/2 cup applesauce
- 1/4 cup molasses
- 1 cup milk (dairy or non-dairy) – may need a little more or less depending on pancake mix
- 1/2 cup dark chocolate chunks or chocolate chips
- Gingerbread Spice:
- 1 tsp. ground ginger
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ground cloves
Instructions
- Preheat oven to 350 degrees. Line a muffin tin with muffin liners and set aside.
- Add pancake mix, cocoa, and gingerbread spices in a large bowl. Mix well.
- In a separate bowl, mix together applesauce, molasses, and milk. Add to pancake mix and combine until a smooth batter forms. Fold in chocolate chips.
- Add batter to muffin tins, about 2/3 the way full ( makes 9-12). Bake for 20 minutes, or until done.
