Take me back to my grade school and middle school days where granola was basically life. What was the best breakfast for me during those awkward tween years? A giant bowl of “healthy” granola that could feed a small country. Oh, I ate the whole box in two days? Oops. “Mom, we’re out of granola. Can you buy more?” <<<<<<<My life on repeat during this stage in my life.
I actually thought those sugary clumps with the sugar coasted raisins were healthy. But I also thought healthy meant you weren’t full after you ate a meal. This elephant-sized bowl of granola filled my up for maybe two hours, if that. I ate breakfast around 7 am and lunch was at 1 pm, so my stomach was rumbling since 9 am. So embarrassing to say the least.
Ok ok enough with this sad story, let me let go of negative Nancy for a sec and give you the details of this recipe. Now I still love me some granola, but I make it so I can make it real healthy, not fake healthy. Yes I get it, Birthday Cake Granola doesn’t sound too promising, after all it’s got cake in the title. But I promise it’s one of the healthiest granola recipes you’ll ever eat.
Let me break down the ingredient list:
toasted gluten-free oats
chia seeds
flax seeds
cashew butter
banana
butter extract
vanilla extract
cashews
white chocolate chips
rainbow sprinkles
Birthday Cake Granola
Cake flavored clusters of granola are joined with cashews, rainbow sprinkles and white chocolate chips to create the breakfast of your dreams! Now you can eat breakfast like it’s your birthday everyday! What else could you ask for?
Birthday Cake Granola
Ingredients
- 2 cups Gluten-free Old Fashioned Oats
- 1/4 cup chia seeds
- 1/4 cup flax seeds
- 1/2 cup chopped cashews
- 1/3 cup cashew butter
- 1/2 ripe banana mashed
- 1/4 cup almond milk
- 1/4 tsp. butter extract
- 1/4 tsp. vanilla extract
- sprinkles
- vegan white chocolate chips optional
- Preheat oven to 350 degrees.
- Place oats on a cooking sheet and bake for 10 minutes or until slightly toasted. Let cool and place in a bowl with flaxseed, chia seeds and cashews.
- In a separate small bowl combine cashew butter, banana, milk and extracts. Mix well.
- Add cashew butter mixture to oat mixture and mix until well combined. Mix in sprinkles.
- Place on a cooking sheet lined with parchment paper. Spread out into a single layer.
- Bake for about 15 minutes or until toasted.
- Let cool then mix in white chocolate chips, if using.
- Enjoy!
