I got some major inspiration at my last family get together a few days ago. Most of you probably remember those Dairy Queen ice cream cakes, the ones with the chocolate on the bottom, chocolate “crunch” stuff in the middle, and vanilla or strawberry ice cream on top with icing, totally delicious, but extremely unhealthy. That’s what was served at the party, so I decided to recreate a totally clean version, fully raw, sugar-free and guilt-free, and not missing an ounce of flavor, literally. Your taste buds will be dancing after tasting this Chocolate Covered Strawberry “ice cream” cake, it will knock your socks off. You may be thinking, “how can a raw vegan, preservative-free, sugar-less “ice cream” cake be so delicious?” Well let this cake speak for itself. This baby is a total miracle, you can have your ice cream cake and eat some ALL too!
Raw Vegan Chocolate Strawberry Crunch “Ice Cream” Cake
Chocolate Layer
- 3 frozen ripe bananas (partially thawed)
- 2 tbsp cocoa powder
1. In a food processor, blend bananas and cocoa powder until smooth
2. Layer on the bottom of a glass loaf pan
3. Freeze for 2 hours, or until hardend
Crunch Layer
- 1/4 cup crushed mix unsalted nuts (any kind you want)
- 1 tbsp honey
- 2 tbsp cocoa nibs
1. Mix all ingredients together and place on top of chocolate layer
Strawberry Layer
- 2 Frozen bananas (partially thawed)
- 8 whole strawberries (fresh or frozen, partially thawed if frozen)
- 1/2 tbsp pure vanilla extract
1. Pulverize all ingredients together and place on top of crunch mixture
2. Freeze for 2 more hours
Chocolate Sauce
- 2 tbsp melted coconut oil
- 1 1/2 tbsp cocoa powder
- 1 1/2 tbsp maple syrup or honey
1. Mix all ingredients together
2. Serve with “Ice cream” cake and top with strawberries, if desired
