This Creamy Sweet Potato Spice Oatmeal topped with crunchy pecans, tart cranberries and a sweet drizzle of pure maple syrup is a delicious and healthy dessert for breakfast!

 

Long time, no oatmeal recipe!

I swear it’s been forever since we posted an oatmeal recipe, so this is long due. In fact, This Recipe was posted in early July! Anyways, it’s not like i haven’t eaten oatmeal since then, i eat it every. single. day. My add in of choice is usually pumpkin, but i decided to change it up since sweet potato are gaining popularity this time of year because of thanksgiving. Im not complaining though, sweet potatoes give oatmeal an incredible creaminess and sweetness that pumpkin doesn’t.

Sweet Potato casserole is my favorite thanksgiving dish, as Bethany already mentioned Here. So this oatmeal is pretty much a breakfast version of sweet potato casserole with the addition of tart dried cranberries, crunchy pecans, and a sweet drizzle of pure maple syrup that is healthy enough for a delicious and satisfying breakfast.

This delicious oatmeal contains no refined sugar, is vegan, gluten-free, dairy-free and an incredible dessert for breakfast!

Creamy Sweet Potato Oatmeal with Pecans and Cranberries {GF + Vegan!}

Ingredients

  • 1/2 cup oats
  • 1/2 cup mashed sweet potato
  • 1 cup unsweetened almond milk
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp vanilla extract
  • topping
  • 2 tbsp crushed pecans
  • 1 tbsp dried cranberries
  • 1/2 tbsp maple syrup

Instructions

  1. Add all oatmeal ingredients in a small sauce pan over medium heat and cook for about 7-10 minutes, stirring periodically
  2. Place oatmeal in a bowl and add in toppings

Oatmeal Raisin Cookie French Toast Cups

Ingredients

  • 10 slices bread, cubed (gluten-free if needed)
  • 2 cups oats (gluten-free if needed)
  • 4 eggs, beaten
  • 1 cup almond milk
  • 1/2 cup applesauce
  • 1/4 cup pure maple syrup
  • 1/2 tsp. pure vanilla extract
  • 1/2 tsp. cinnamon
  • 1 1/2 cup raisins

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat eggs, milk, applesauce, maple syrup, vanilla and cinnamon in a large bowl.
  3. Mix in bread, oats and raisins and combine well.
  4. Place muffin liners in muffins tins and spoon on mixture into 12 slots.
  5. Bake for 20 minutes, or until done.

Fluffy Blueberry Oatmeal Pancakes

For this particular recipe, I wanted to showcase the some of the Made to Matter products that are near and dear to my heart!  I used Stonyfield plan yogurt, Simply balanced Dried Blueberries, and Simply Balanced Blueberry Sparkling Water!  You might be confused at why I added flavored sparkling water to pancakes, but believe it or not, it helps to create an unbelievable fluffy texture!

Fluffy Blueberry Oatmeal Pancakes

Gluten-free, healthy, refined sugar-free
Ingredients
  • 1 cup gluten-free oat flour
  • 1/2 cup Stonyfield plan yogurt*
  • 1/2 tsp. baking soda
  • 1/2 cup Simply Balanced Blueberry Sparkling Water
  • 1 egg, beaten**
  • 1/4 cup Simply Balanced Dried Blueberries
Instructions
  1. Mix together yogurt and baking soda in a bowl, let sit for 5 minutes.
  2. Combine all ingredients together until fully combined.
  3. Spray cooking spray on a skillet at medium heat and spoon on mixture into pancakes. Flip over once it starts to bubble. Repeat with remaining pancakes
 * Use coconut milk yogurt if vegan
** Use flax egg if vegan

Banana-Peanut Butter Cheesecake Oatmeal Cups

Don’t you hate those mornings when you wake up late and have to rush out the door to go to and you can’t eat a nice breakfast so you grab a icky power bar that tastes chalky and fills you up for about 10 minutes. Yea, that’s a miserable start to one’s day. Well for those days when you can’t sit down to eat breakfast, you don’t have to grab a power bar, you can eat a baked oatmeal cup. A nice, filling and healthy start to a busy day, especially since these are banana oatmeal cups with a PEANUT BUTTER CHEESECAKE FILLING!

You can’t go wrong with these Oatmeal Cups as the perfect grab n’ go breakfast, you can even double or triple the recipe and store them in the freezer for those days when you unintentionally have to rush out the door or for a healthy snack!photo 3.PNG-9

Banana-Peanut Butter Cheesecake Baked Oatmeal Cups

Oatmeal Cups

  • 1 cup old fashioned oats
  • 1/2 tsp baking powder
  • 1 egg (use chia or flax egg to make this vegan)
  • 1 ripe banana,mashed
  • 1/2 tsp vanilla extract
  • 2 tbsp crushed peanuts

1. Preheat oven to 350 degrees and line a muffin pan with muffin liners

2. In a large bowl, mix oats and baking powder together

3. In a small bowl mix together egg, banana, and vanilla and add to dry ingredients

4. Divide half of batter into 4 muffin cups, top with cheese cake mixture, top with rest of batter and sprinkle with chopped peanuts
5. bake for 10-15 minutes, or until done

 

Cheesecake filling

  • 3 tbsp neufchâtel cheese or cream cheese, softened (use tofu cream cheese to make vegan)
  • 1.5 tbsp creamy natural peanut butter
  • 1/2 tbsp honey/maple syrup

1. Mix all ingredients together well and go to step 4 for oatmeal cups

Lemon Strawberry Cheesecake Oatmeal

Delicious and Healthy Lemon Strawberry Cheesecake Oatmeal tastes like dessert for breakfast! It’s so easy to make and is sure to be a crowd-pleaser!

I am naturally a morning person, not by choice. I mean I would love to be able to sleep in until 10 AM, but my body thinks it’s a great idea to wake me up at 6:30ish every day. No matter what time I go to bed, I am always up by that time. I have created a theory on why I wake up so early, and I noticed, I am always starving when I wake up! Maybe it’s the hunger that always wakes me up so early, hmmmmmm.

Anyway, when I’m starving, I don’t have the patience to cook a 30 minute breakfast, I’d rather sacrifice quick oats made in 2 minutes in the microwave instead of tastier and creamier steel cut oatmeal made on the stove in 438290 30 minutes. Now you’re probably thinking, “Then why do you use steel cut oats in this recipe?” I don’t use regular, takes foorrreeevvveeerrrr to cook, steel cut oats, I use Coaches Oats!

Strawberry-Lemon Cheesecake Steel Cut Oatmeal

Ingredients

  • 1/3 Coaches Oats*
  • 1 cup unsweetened almond milk
  • 1/4 tsp vanilla extract
  • 2 tbsp full-fat greek yogurt or 1 tbsp cream cheese (or non-dairy cream cheese)
  • 1/2 tbsp honey/maple syrup
  • 1 tbsp lemon zest
  • 5 strawberries, pureed 

Instructions

  1. 1. Cook Oats with milk and vanilla in microwave for about 2-3 minutes
  2. 2. Mix in yogurt/cream cheese, honey and lemon zest, top with strawberry puree
  3. *steel cut oats or old fashioned oats can be replaced with Coaches Oats

I actually never had German Chocolate Cake until last summer, thank goodness I did, it’s amazing but a little too rich. So as a self-proclaimed oatmeal enthusiast, I thought it would be a good idea to incorporate the flavors of this cake into oatmeal. I gave it to my Mom for breakfast (she is pretty picky and will tell me flat-out if she doesn’t like anything, guess it’s payback from when I was a kid ) and let her decide if this was blog-worthy, she was in love.

You would never guess that this decadent German Chocolate Cake oatmeal is healthy! It tastes exactly like the popular dessert!

 

So if you want cake for breakfast, I’d advise you to make this German Chocolate Cake Oatmeal for an unbelievably healthy and delicious start to your day!

German Chocolate Cake Oatmeal

Ingredients

  • German Chocolate Cake Oatmeal
  • Oatmeal
  • 1/2 cup old fashioned oats
  • 1 tbsp cacao powder
  • 1/2 tbsp maple syrup/honey
  • 1 tbsp ground flaxseed
  • 1/4 tsp vanilla extract
  • pinch of salt
  • Glaze
  • 1 tsp coconut oil
  • 1/2 tbsp honey
  • 2 tbsp crushed pecans
  • 1 tbsp unsweetened flaked coconut

Instructions

  1. 1. Place all oatmeal ingredients in a saucepan and heat over medium heat for about 10-15 minutes or until thick, stir periodically
  2. 2. Place oatmeal in a bowl
  3. 3. For the glaze, melt coconut oil and honey in a microwave-safe bowl for 20 seconds and then pour glaze on top of oatmeal
  4. 4. Top oatmeal with pecans and coconut and enjoy! 🙂

DIY Banana Bread Honey Bunches of Oats Cereal

photo 1 A few years ago I believed that the most perfect cereal was Post Honey Bunches of Oats.  I adored all the textures and flavors that each bowl consisted of.  The flakes, clusters of oats and honey , dried fruit and nut pieces all combined just perfectly for a complete breakfast.  I stopped buying it when I realized  it wasn’t as healthy as I had once thought.   photo 3 While browsing the isles of the grocery store, I stumbled upon a box of it, and I had a great idea to make my own version.  Full of filling fiber and healthy all-natural ingredients, this won;t leave you feeling hungry half an hour later like most cereals lacking in fiber do. photo 5 DIY Banana Bread Honey Bunches of Oats Cereal Flakes (adapted from A Bite of Becky)

  • 1 cup oat flour
  • 1/3 cup brown rice flour (or other gluten-free flour)
  • 1/4 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 overripe banana,mashed
  • 1 Tbsp. maple syrup/honey/agave nectar
  • 1/4 cup almond milk
  • 1/3 cup + 1 Tbsp. water
  1. Preheat oven to 350 degrees.
  2. In a bowl combine flours, baking powder and cinnamon.  Mix well.
  3. Add in remaining ingredients and blend well, forming a wet dough.
  4. Line a cookie sheet with parchment paper and spread dough as thin as possible with rubber spatula.
  5. Bake for about 15 minutes, or until slightly crispy.  Take out of oven and break into small flakes.
  6. Bake for another 15 minutes or until flakes are crispy.

Oat Clusters

  • 3/4 cup  oats
  • 1/2 overripe banana, mashed
  • 1/2 Tbsp. maple syrup/honey/ agave nectar
  • 1/4 cup sliced almonds
  • 1/8 tsp. vanilla extract
  • 1/4 tsp. cinnamon
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a bowl.
  3. Line a cookie sheet with parchment paper and  add on mixture a spread into little clusters.
  4. Bake for about 25 minutes, or until oats are toasted.

Banana Chips

  • 1 overripe banana
  • Preheat oven to 350 degrees.
  • Line a cookie sheet with parchment paper.  Slice banana into thin slices about 1/8 to 1/4 inch thick.
  • Bake for about 30 minutes, or until banana chips are slightly crispy

Note: All of these can be made at the same time and can bake to gether in the oven. Once they are all done baking and cooled, combine them together to form copy cat honey bunches of oats cereal. photo 4 Health Benefits Bananas:

Dark Chocolate Orange Oatmeal Brûlée

I love chocolate (who doesn’t right?), especially dark chocolate.  I love the bitter yet slightly sweet taste of it.  I remember sampling a piece of fine dark chocolate with a hint of orange from Paris and it was out of this world!  I missed that flavor so much that I NEEDED to recreate it.  And of course it had to be oatmeal, because  I eat oatmeal everyday!  Not any kind of oatmeal, oatmeal brûlée because it is fancier and more amazing than regular oats!  This flavor combo may be the most amazing yet, thanks to the bitterness of the cocoa paired with the sweet acidity of the orange.  You will not be disappointed! photo 3 Click HERE to get your unrefined Cane Sugar!

Dark Chocolate Orange Oatmeal Brûlée

  • 1/3 cup oats
  • 1/4 cup almond milk
  • 2 Tbsp. freshly squeezed juice from an orange
  • 1/8 tsp. vanilla extract
  • 1 Tbsp. cocoa powder
  • 1 tsp. grated orange rind
  • 1 tsp.  dark chocolate chips ( can be vegan), chopped or cocoa nibs
  • 1 tsp. unrefined cane sugar ( I used chancaca)
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a ramekin.  Mix well.
  3. Bake oatmeal for about 15 minutes, or until done.
  4. Sprinkle oatmeal with cane sugar. 
  5. Heat oven to broil (550 degrees) and place oatmeal in oven for about 1 minutes, or until sugar caramelizes.
  6. Enjoy!
