I like waking up to not have to rush at the door but at the same time I really like sleeping so the struggle is real.  I’m a fan of making a nice satisfying breakfast before leaving the door so I can feel energized for the day ahead but the chances of that happening are super slim.  Because of my heavy-sleeper genes I got from my dad, I need to make sure I have healthy breakfast options that I can eat on the go because if not, I’ll be a hungry monster.

Don’t get me wrong, I would love to make french toast for breakfast every morning but its just not possible.  So I had an idea of making french toast muffins, the great taste of french toast that can be grabbed right before heading out the door.  If you make it in advance and keep them in the freezer, your life will be right on track.

These muffins literally took me 5 minutes to prep and I had all the ingredients on hand and I’m sure you do to.  And like any great food blogger, I wanted to make an innovative flavor that would want me to get out of bed asap.

Who knew that oatmeal raisin cookies and french toast went so well together?

 

Oatmeal Raisin Cookie French Toast Cups

Ingredients

  • 10 slices bread, cubed (gluten-free if needed)
  • 2 cups oats (gluten-free if needed)
  • 4 eggs, beaten
  • 1 cup almond milk
  • 1/2 cup applesauce
  • 1/4 cup pure maple syrup
  • 1/2 tsp. pure vanilla extract
  • 1/2 tsp. cinnamon
  • 1 1/2 cup raisins

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat eggs, milk, applesauce, maple syrup, vanilla and cinnamon in a large bowl.
  3. Mix in bread, oats and raisins and combine well.
  4. Place muffin liners in muffins tins and spoon on mixture into 12 slots.
  5. Bake for 20 minutes, or until done.

Cranberry Pumpkin French Toast Rollups

These healthy Cranberry Pumpkin French Toast Rollups are a delicious change from french toast for a satisfying and tasty breakfast!

I know I’ve confessed my love of pumpkin before, but I just need to shout it out so the whole world can here (sorry not sorry)!  I love baking with it because it’s so versatile!  Since I received some amazing sprouted whole grain bread from Silver Hills Bakery, I just knew that a new french toast rollup recipe was calling my name! And of course I used pumpkin, because it is fall’s best flavor!  I also had some cranberries on hand, so I decided to mix that up with the pumpkin and voila an amazing recipe was born!  This is a perfect fall breakfast!

Cranberry Pumpkin French Toast Rollups

Ingredients

  • 6 slices of Silver Hill's Bakery Bread (I used Steddy Eddy), crusts cut off
  • Pumpkin-Cranberry Butter
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp. almond milk
  • 1/2 tsp cinnamon

Instructions

  1. Use a rolling pin to roll the bread slices into thin squares
  2. Put about a 1 tbsp of the Pumpkin-Cranberry Butter each bread slice and roll up
  3. Mix the remaining ingredients and place into a bowl
  4. Dip each rollup into the egg mixture and place in a skillet coated with cooking spray on medium heat for about 1-2 minutes each, or until done
  5. Top with maple syrup, more pumpkin-Cranberry butter, or what you desire! 6. Enjoy!

Pumpkin Cheesecake French Toast Bread Bake

Tis the season for everything pumpkin!  Fall is my favorite time of the year and one of the reasons may or may not be because you can find pumpkin in abundance!  I love everything about pumpkin, how creamy it is, how easy it is to bake with, the flavor of it, etc…  I always try to think outside of the box for new recipes and I’m glad to say this one is a hit!  I recieved Silver Hill Bakery bread in the mail yesterday and just knew I had to make something amazing with it!  And voila this beuaty was born!  who knew pumpkin cheesecake and french toast would be an amazing combo?  Oh and not to mention this bake is totally healthy so don’t feel guilty about it and enjoy every bite!

Pumpkin Cheesecake French Toast Bread Bake

Serves 3-4

  • 3 cups cubed silver hills bakery bread
  • 2 Tbsp. chopped nuts
  • 2 Tbsp. craisins
  • 1 egg, beaten
  • 1/4 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1/4 cup pumpkin puree
  • 1/4 cup  milk ( I used almond)
  • 2 oz. lowfat cream cheese, softened
  • 1/3 cup pumpkin puree
  • 1 Tbsp. pure maple syrup/ honey
  • 1/4 tsp. pumpkin pie spice
  1. Preheat oven to 350 degrees.
  2. Place cubed bread, nuts and craisins in a medium bowl.
  3. In a small bowl, combine egg,  vanilla,cinnamon, pumpkin puree, and milk.  Mix well.  Add to bread, making sure it is evenly coated with mixture.
  4. In a separate small bowl, combine remaining ingredients. Mix well.
  5. Spray cooking spray in a loaf pan, and add 1/2 of bread mixture.  Spread cream cheese mixture over top, them top with remaining bread mixture.
  6. Bake for about 20 minutes, or until done.
  7. Enjoy!

Caramelized Banana-Cranberry Baked French Toast

Who doesn’t love french toast, especially on a crisp fall sunday morning. Ain’t nothing better, especially when you make Caramelized Banana-Cranberry French Toast, now where talkin’. Bananas and cranberries go so well together, perfect for a sweet fall compote. This french toast is super healthy and super clean, nothing artificial, it’s made with the best ingredients possible, including the best sprouted  grain bread ever , Silver Hill’s Bakery Bread, you can’t go wrong. After taking one bite of this luscious breakfast, my mouth was in heaven, make this, and yours will be too.

Caramelized Banana-Cranberry Baked French Toast

Banana-Cranberry Compote:

  • 1/2 tbsp coconut oil
  • 2 cups fresh or frozen cranberries
  • 2 ripe bananas, sliced
  • 1 tsp cinnamon
  • 1 tbsp honey

1. In a small sauce pan, melt coconut oil on medium-low heat

2. Add slice bananas, cinnamon and honey, stir until bananas reach a sauce-like consistency

3. Add in cranberries and stir continuously until the cranberries “pop” and make a sauce.

4. Remove from heat

French Toast:

  • 8 slices of Silver Hill Farms Bread or gluten-free bread
  • 2 eggs (or flax eggs)
  • 1.5 cups of almond milk (or any type of milk)
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp coconut oil, melted
  • Banana-Cranberry Compote (recipe above)
  • 1 ripe banana, thinly sliced

1. Spray a cookie sheet/ jelly roll pan with cooking spray and preheat oven at 350 degrees

2. In a medium-sized bowl, whisk together eggs, milk, cinnamon, vanilla, and coconut oil

3. Dip bread slices into egg mixture and place in a single row on the cookie sheet.

4. Pour remaining egg mixture onto bread slices

5. Spread bread slices evenly with compote

6. Place banana slices on top compote

7. Bake for 25-30 minutes, or until done

8. Top with maple syrup, whipped cream, or whatever you desire! Enjoy! 🙂

Perfect Fall Breakfast: Pumpkin-Ricotta French Toast Roll-ups

The flavor of pumpkin means fall and with the best season for baking coming around, I knew I just had to make this french toast roll-up flavor.  French toast roll-ups are amazing, but even more amazing with a pumpkin ricotta filling.  Full of fiber and protein , these are the perfect fall breakfast.  Eat them with a hot cup of coffee and watch the leaves fall, ain’t  Nothing better than that.

Pumpkin Ricotta French Toast Roll-ups

Makes 10 Roll-ups

  • 10 slices ezekiel bread/ gluten-free bread/whole-grain bread
  • 2 eggs or 1 egg and two egg whites, beaten
  • 1/2 cup pumpkin puree
  • 1/4 cup ricotta cheese/ tofu ricotta cheese
  • 1 tsp. agave/honey
  • 1/4 cup almond milk
  • 1/2 tsp. vanilla extract
  • 1 1/4 tsp. cinnamon
  • 1/4 cup unrefined cane sugar ( I used Chancaca)
  1. Take crusts off of bread and roll each slice with a rolling pin until flattened
  2. In a bowl combine pumpkin, ricotta and honey. Roll slices up and repeat for all.
  3. In a shallow bowl, combine eggs, almond milk, and vanilla .  Mix well.
  4. In a separate bowl combine cinnamon and sugar.
  5. Heat a skillet on medium-low heat and coat with cooking spray.
  6. Dunk rolls in egg mixture, then add to skillet, cooking them until golden then turning over to the other side.  Repeat with remaining roll-ups.
  7. Once out of skillet immediately roll in cinnamon-sugar.
  8. Enjoy!
