Creamy Sweet Potato Spice Oatmeal with Pecans and Cranberries {GF + Vegan!}

This Creamy Sweet Potato Spice Oatmeal topped with crunchy pecans, tart cranberries and a sweet drizzle of pure maple syrup is a delicious and healthy dessert for breakfast!

 

Long time, no oatmeal recipe!

I swear it’s been forever since we posted an oatmeal recipe, so this is long due. In fact, This Recipe was posted in early July! Anyways, it’s not like i haven’t eaten oatmeal since then, i eat it every. single. day. My add in of choice is usually pumpkin, but i decided to change it up since sweet potato are gaining popularity this time of year because of thanksgiving. Im not complaining though, sweet potatoes give oatmeal an incredible creaminess and sweetness that pumpkin doesn’t.

Sweet Potato casserole is my favorite thanksgiving dish, as Bethany already mentioned Here. So this oatmeal is pretty much a breakfast version of sweet potato casserole with the addition of tart dried cranberries, crunchy pecans, and a sweet drizzle of pure maple syrup that is healthy enough for a delicious and satisfying breakfast.

This delicious oatmeal contains no refined sugar, is vegan, gluten-free, dairy-free and an incredible dessert for breakfast!

Creamy Sweet Potato Oatmeal with Pecans and Cranberries {GF + Vegan!}

Ingredients

  • 1/2 cup oats
  • 1/2 cup mashed sweet potato
  • 1 cup unsweetened almond milk
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp vanilla extract
  • topping
  • 2 tbsp crushed pecans
  • 1 tbsp dried cranberries
  • 1/2 tbsp maple syrup

Instructions

  1. Add all oatmeal ingredients in a small sauce pan over medium heat and cook for about 7-10 minutes, stirring periodically
  2. Place oatmeal in a bowl and add in toppings

Apple Pie Yogurt Brûlée

Do you crave something sweet for breakfast? Have no fear! You can make this Healthy Apple Pie Yogurt Brûlée in a few minutes!

I LOVE greek yogurt for breakfast!  Its one of the few things that actually keep me full for at least 3 hours!  Everything else I eat leaves me hangry after an hour of eating (#fastmetabolismproblems ).  But I’m completely serious when I say NOTHING feels me up quite like a big bowl of greek yogurt does.  I’ve tried every breakfast food, from three egg omelets, oatmeal with a ginormous amount of PB, five multi-grain pancakes with bacon, etc.

Maybe its because my body is picky and tries to imply that only yogurt will do, or maybe its all in my head (insert awkward smiling emoji).  But I’m not complaining, because greek yogurt is one of the most perfect foods in my opinion!  Its full of satisfying protein that gives me tons of energy to go about my day!

Did you ever had apple pie for breakfast?  oh no you didn’t?  You can change that now!  Did you have creme brûlée for breakfast before? Oh no, not that either?  I can fix that!  You can have this simple but perfect Apple Pie Yogurt  Brûlée for breakfast that can be made in under 5 minutes!  Its hard to believe that this dessert breakfast is made of all natural ingredients and is paleo friendly, vegan friendly (when coconut yogurt is used), grain-free, gluten-free and just plain delicious!

Apple Pie Yogurt Brûlée

Ingredients

  • 1/2 plain greek yogurt or coconut yogurt
  • 1 small apple, finely chopped
  • 2 Tbsp. crushed walnuts
  • 1/2 Tbsp. pure maple syrup
  • 1/8 tsp. ground cinnamon
  • 1/8 tsp. pure vanilla extract
  • 1 tsp. coconut sugar

Instructions

  1. Mix together chopped apple and cinnamon in a microwave-safe bowl. Microwave for 1minute 30 seconds, or until apples are softened.
  2. Combine yogurt, walnuts, maple syrup and vanilla. Mix in baked apple. Add mixture to ramekin.
  3. Evenly spread coconut sugar on top of yogurt. Using a torch, melt the sugar and form a crispy top. Enjoy immediately

These Flourless Apple Pecan muffins are the perfect grab n’ go breakfast for a chilly fall morning!

The fall weather is starting to grow on me.

For years I was convinced that I needed to move to a warmer area of the states because I hate cold. I am now starting to appreciate the season changes and the pretty views and have come to realize that fall would not be the same without the changing weather. I still hate the cold, but what I love fall is

Let’s face it, New England has the most perfect fall weather, but let’s not get into winter so fast. All of you fall-loving people will appreciate these flourless Apple Pecan Muffins to satisfy your needs for all-things-autumn! Eat these in your fuzzy socks, sweat pants, big sweaters on a cold fall day and you’ve got the perfect breakfast/snack/dessert!

These apple pecan muffins are fall-inspired, paleo,vegan, GF, DF, pecan-apple-cinnamony deliciousness!

Flourless Apple Pecan Muffins

Ingredients

  • Flourless Apple-Pecan Pie Muffins
  • 1 cup pecan meal (grind 1 cup of pecans in food processor until fine)
  • 1 egg (or flax egg for vegan)
  • 2 tbsp unsweetened apple sauce
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1-2 tbsp honey, optional ( I like it w/o, but if you can add if you want)
  • 1/4 tsp baking soda
  • pinch of salt
  • 1 Finely chopped apple

Instructions

  1. 1. Pre-heat oven at 350 and put cupcake liners in a muffin tin
  2. 2. Throughly mix all ingredients together in a large bowl, divide batter among cupcake liners (makes about 6)
  3. 3. Bake for 20-30 minutes, or until done

Sweet Potato Oatmeal Bread with Pecan Streusel {GF + Vegan!}

Looking for a good quick bread recipe for fall? Make this Gluten-free healthy Sweet Potato Oatmeal Bread with Pecan Streusel!

You know those dishes/foods that you eat so much of, but you don’t get sick of?  That’s my relationship with sweet potatoes.  In fact, I eat them so much that my skin is slightly tinted orange from the beta carotene overload!  Don’t worry though, people actually tell me I look tan!  I’d say that’s an added plus for eating sweet potatoes.

At Thanksgiving, I’ve alway been the person who skips the turkey, stuffing and other classic dishes to dig right into the sweet potato casserole.  And then I manage to eat half of it while everyone is stuffing their face with turkey.

I’m also that person who buys 10 pounds of sweet potatoes at one time because the little 2 pound bag ain’t got nothing on my sweet potato obsession.

Now I’m a huge fan of any quick bread, so naturally I had to make a sweet potato version.  Pumpkin bread and banana bread are good, but when compared to sweet potato pecan streusel bread, well lets just say there is no comparison.  Its moist, doughy, dense, naturally sweet, full of fiber, gluten-free, dairy-free, vegan-friendly and everything you want in a quick bread.

 

Sweet Potato Pecan Struesel Oatmeal Bread

Ingredients

  • 2 cups gluten-free oat flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1 cup mashed sweet potato (about 2 sweet potatoes)
  • 1 egg, beaten (can sub 1 Tbsp. ground flax mixed with 3 Tbsp. water for flax egg)
  • 1/2 cup almond milk
  • 1 Tbsp. coconut oil, melted
  • 2 Tbsp. pure maple syrup
  • 1/4 tsp. pure vanilla extract
  • TOPPING
  • 1/2 cup chopped pecans
  • 1/4 cup gluten-free oats
  • 2 Tbsp. coconut sugar
  • 1/2 tsp. cinnamon
  • 1 Tbsp. coconut oil

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine first 4 ingredients in a large bowl and whisk together.
  3. In a separate bowl combine sweet potato, egg,milk, oil, maple syrup and vanilla. Whisk together until mixture is smooth.
  4. Add sweet potato mixture to dry ingredients. Mix well until all ingredients are equally and completely combined. Fold in chopped pecans
  5. Spray cooking spray in a loaf pan and spoon in mixture, smoothing the top so its not lumpy.
  6. For topping, combine all ingredients together in a small bowl. Sprinkle on top.
  7. Bake for 35 minutes, or until golden.
  8. Let cool and take out of loaf pan.
  9. Enjoy!
