Love sweet potatoes? You’ll swoon over this simple Cinnamon Roll Creme Brûlée Stuffed Sweet Potato! It doubles as a healthy breakfast and dessert! Also gluten-free, vegan and paleo!
I feel like I’ve been on a (cinnamon) roll with making sweet potato recipes lately. Within the span of a week I managed to create five recipes including my favorite food. Sweet potatoes are a HUGE part of my diet if you haven’t noticed yet. I also happen to love making recipes with them if you also haven’t noticed yet. In fact, I eat them so much that I have a slight beta-carotene tan on my skin.😝
I think it’s funny that most people think of sweet potatoes as a dinner side, but I disagree. I solely believe that sweet potatoes belong to every meal, breakfast and dessert included. Come on man, they are naturally sweet (aka they were destined for greatness).
Have you ever stuffed your sweet potato? I first tried it with nut butter and fell in loveeeeeeeee, so then I began experimenting with crazy combos. Cinnamon roll filling with creme brûlée-like topping sounded like a greeaattt idea. And a great idea it is.
This stuffed sweet potato is another recipe that I like to call “bressert”. It’s super filling, decadent, sweet, but also healthy in disguise. It’s a great breakfast on the go, and even night time snack. It’s also super easy to make! All you need is:

Cinnamon Roll Creme Brûlée Stuffed Sweet Potato
A roasted sweet potato is stuffed with a greek yogurt cinnamon roll filling, and sprinkled with coconut sugar creme brûlée topping for a sweet and satisfying healthy breakfast or dessert!
- 1 large sweet potato, roasted
- 1/2 cup greek yogurt/ coconut yogurt/coconut cream
- 1/2 Tbsp. maple syrup
- 1 tsp. cinnamon
- 1/8 tsp. vanilla
- 1/2 Tbsp. coconut sugar
- Slice the middle of the sweet potato to open it up.
- Combine greek yogurt, maple syrup, cinnamon and vanilla in a small bowl. Stuff into sweet potato.
- Sprinkle coconut sugar evenly on top. Use a blow torch to melt and caramelize the coconut sugar.
