I don’t always drink my food, but when I do, it’s in the form of a blueberry muffin. Seriously, eating food is way more appealing to me than drinking it. Hmmmm maybe because it lasts longer😏
I usually don’t like making drink recipes for the blog because I’m not creative that way. Breakfast/dessert recipes are my forte, and drink recipes are basically non-existent on the blog. Don’t get me wrong, I love my smoothies and coffee drinks, but the ones I make aren’t “blog worthy”. Except for this one.
This drink is like a gourmet coffee drink and a smoothie in one, aka a frappe. It’s frozen caffeinated bliss. The creaminess, dreaminess and hint of vanilla comes from Silk’s Vanilla Almond Milk Creamer. This dairy-free, gluten-free and soy-free creamer makes for the perfect homemade coffee drink. Going back to this Blueberry Muffin Frappe though, I can’t tell you how happy I am with this recipe. You should be happy to because you can save money (and calories) by making this frappe instead of going to gourmet coffee shops to get a $6 drink full of sugar.
Healthy Blueberry Muffin Frappuccino
Complete with a crumble topping and coconut whipped cream, This Healthy Blueberry Muffin Frappe will be your new favorite coffee drink! Thanks to Silk’s Vanilla Almond Milk Creamer, this drink is creamy, sweet and everything you want your frappe to be! You won’t believe that it’s full of healthy ingredients!
- 1 cup strong coffee, cooled
- 1/4 cup Silk Vanilla Almond Milk Creamer
- 1 cup frozen blueberries
- 2 Tbsp. cashew butter
- 1/4 tsp. blueberry extract (optional)
- stevia to taste (optional)
- Crumble Topping:
- 2 Tbsp. almond flour
- 1 Tbsp. crushed nuts
- 1/2 Tbsp. coconut sugar
- 1 tsp. coconut oil, melted
- Coconut whipped cream
- Place all ingredients in a high power blender (except for toppings). Blend until mixture is smooth.
- For crumble topping, combine all ingredients in a small bowl.
- Pour Frap in glass, add whipped cream, and sprinkle on crumble topping.
