Tis the season for everything pumpkin! Fall is my favorite time of the year and one of the reasons may or may not be because you can find pumpkin in abundance! I love everything about pumpkin, how creamy it is, how easy it is to bake with, the flavor of it, etc… I always try to think outside of the box for new recipes and I’m glad to say this one is a hit! I recieved Silver Hill Bakery bread in the mail yesterday and just knew I had to make something amazing with it! And voila this beuaty was born! who knew pumpkin cheesecake and french toast would be an amazing combo? Oh and not to mention this bake is totally healthy so don’t feel guilty about it and enjoy every bite!
Pumpkin Cheesecake French Toast Bread Bake
Serves 3-4
- 3 cups cubed silver hills bakery bread
- 2 Tbsp. chopped nuts
- 2 Tbsp. craisins
- 1 egg, beaten
- 1/4 tsp. vanilla extract
- 1/2 tsp. cinnamon
- 1/4 cup pumpkin puree
- 1/4 cup milk ( I used almond)
- 2 oz. lowfat cream cheese, softened
- 1/3 cup pumpkin puree
- 1 Tbsp. pure maple syrup/ honey
- 1/4 tsp. pumpkin pie spice
- Preheat oven to 350 degrees.
- Place cubed bread, nuts and craisins in a medium bowl.
- In a small bowl, combine egg, vanilla,cinnamon, pumpkin puree, and milk. Mix well. Add to bread, making sure it is evenly coated with mixture.
- In a separate small bowl, combine remaining ingredients. Mix well.
- Spray cooking spray in a loaf pan, and add 1/2 of bread mixture. Spread cream cheese mixture over top, them top with remaining bread mixture.
- Bake for about 20 minutes, or until done.
- Enjoy!

Hi This sounds like a pumpkin cheesecake bread and butter pudding. Might give it a go although we use pumpkin as a vegetable in Australia, will be interesting to see what the family think. Thank you for this great idea. Blessings

I’m just confused about the amount of pumpkin puree – you have it listed twice in the ingredients 🙂
The one measurement is mixed in with the bread and the other is mixed in with the cream cheese layer!Sorry about that!
