Being back at college is nice and all, but I really miss having a kitchen and more living space! But that’s okay, since I can still make food in my dorm, it may always be my ideal meal, but I’m trying my best to “cook” meals in my dorm room! Lets face it, the dining hall isn’t very good, I mean all I ever eat there is chicken, fish, and salad, not too exciting. I hope you enjoy my eats today, and if you live in a dorm at the moment, I hope to inspire you to make your own healthy food in your dorm!
Breakfast before practice is typically oatmeal since it keeps me full and gives me a lot of energy! I love to change up my oats with different add/ins.
Today’s breakfast was 1/2 cup oatmeal cooked with water and Chia seeds. I added Kauffman’s Pumpkin Butter(literally my favorite thing ever, check out my review HERE), some apple sauce, 1/2 apple, a few crushed nuts and a dollop of all natural Peanut Butter!
I usually manage to go to the dining hall for lunch, but I really didn’t feel like it today. Lunch typically is chicken with roasted veggies and a salad, all day every day.
Today for lunch I made a baked potato and added some canned tuna and some canned black beans, it was actually a really good combo. I mixed it all together after I took this photo!
Dinners are the same as lunch usually, but today I had one of my favorite things from the HUB. It is a taco salad, you can pretty much put anything you want on it, but I always go for the healthy, not to mention delicious options! This one has Grilled Chicken, roasted veggies, shredded lettuce, red beans, Pico de Gallo, salsa, tomato, onions, olives, cilantro and most importantly, GAUC! Yum!
My snacks today were an apple, rice cake and Red Velvet ELLI QUARK (so so good, you must try!)!
Thank You Jen for hosting!

Ugh I hate dining hall food! I still have a few more weeks before schools starts and I’m doing everything I can to make use of my full kitchen!
