DIY Healthy Gourmet Popcorn: Peanut Butter Chocolate Crunch Popcorn
I have a little bit of magic for you today, something peanut-buttery, Chocolatley, Crunchy, fluffy in your mouth, and perfectly healthy and clean at the same time. Can you guess what it is? There, I got ya! You don’t even have a clue, but the answer is my newest creation, Peanut-Butter Chocolate Crunch Popcorn, so decadent, so sweet, so tasty, you wouldn’t even guess that it is sugar-free, preservative-free, all natural, 100% clean, and super-duper simple to make, now that’s magic!
Peanut Butter Chocolate Crunch Popcorn
- 8 cups freshly popped plain popcorn
- 2 Tbsp. coconut oil
- 2 Tbsp. peanut butter
- 2 Tbsp. slivered almonds
Chocolate drizzle
- 1 Tbsp. coconut oil
- 1 Tbsp. cocoa powder
- 1/2 Tbsp. honey
- Melt coconut oil and peanut butter in microwave for about 30 seconds, or until fully melted.
- Mix peanut butter mixture and almonds into popcorn. Mix thoroughly, or until each piece is evenly coated.
- For the chocolate sauce, melt coconut oil in microwave for about 30 seconds, or until fully melted. Stir in cocoa powder and honey.
- Drizzle chocolate on top of popcorn.
- Enjoy!

Peach and White Chocolate Granola Bars {Vegan & GF}
I used to love granola bars as a kid, especially the ones with chocolate chips and drizzled with chocolate! I always thought them to be healthy, but I soon learned they were full of artificial flavors and added sugar. I miss them so much though, so I took action and made my own. These granola bars are even better! Peach butter and White Chocolate is a to-die-for combination, if you haven’t tried it, you will eventually understand! No added sugar or processed ingredients in these tasty snacks,only sweetened with Kauffman’s Sugar-free Peach Butter (Click HERE to get your jar)! These will become your kids new favorite granola bar!
Peachy Keen White Chocolate Granola Bars
- 1 cup walnuts
- 1/2 cup raisins
- 1 cup peach butter (preferably no-sugar added version like Kauffman’s)
- 1 cup oats
- 1/2 tsp. cinnamon
- 1/4 cup vegan white chocolate chips, chopped
- Preheat oven to 350 degrees.
- In a food processor, add walnuts, raisins and peach butter. Blend for about 20 seconds, or until nuts are crumbs and raisins are paste-like.
- In another bowl combine oats, cinnamon, and white chocolate chips.
- Add peach mixture to oat mixture and mix well.
- Spray cooking spray in a jelly roll pan. Add mixture and spread evenly on the bottom of the pan.
- Bake for about 25 minutes, or until bars are finished cooking.
- Let cool for about 10-15 minutes and slice. Melt more white chocolate and drizzle on top of bars, if desired.
- Enjoy!

Cinnamon-Pecan Pumpkin Granola Bars
It’s officially the pumpkin season and you all know what that means, pumpkin-flavored everything! Woo-hoo! I just love pumpkin, I just don’t actually eat it in fall though, I literally have it all year round! What’s not to love about this versatile and delicious squash!? It can be added to virtually almost every type of dish: oatmeal, pancakes, yogurt, chili, pie, wraps,lasagna, you name it, and there is a pumpkin version. Packaged granola bars seem really easy and convenient, but most of the time you are actually doing yourself, and your body a disservice when buying them! First of all they can be uber expensive, loaded with sugar and preservatives, and can be heavily processed. On average, a granola bar typically can cost 75 cents or more per bar, doesn’t sound like much, but when you are buying 12, it really adds up. The good news is that you can make your own for dirt cheap! Plus these ones are pumpkin filled!!! These granola bars taste like fall, cinnamon, crunchy pecans and pumpkin, and such a quick and easy grab-and-go snack or quick breakfast!
Cinnamon-Pecan Pumpkin Granola Bars
- 2 cups dry oats
- 2 ripe bananas, mashed
- 3 tbsp sliced almonds
- 2 tbsp sunflower seeds
- 2 tbsp pumpkin puree
- 2 tbsp maple syrup
- 1 tsp cinnamon
- 10 whole pecans
1. In a large bowl, mix everything together except pecans, mix until thoroughly combined
2. Spray some cooking spray in a jelly roll pan and place oven at 350 degrees
3. Spread mixture evenly in the pan and press one pecan where each granola bar will be cut after baked
4. Bake for about 15-20 minutes or until golden
5. Let cool and cut into 10 even bars
6. Enjoy!

Welp, it’s been a hot minute (more like 3 years) since I made these granola bars. It’s sad to think that I’ve forgotten about them, buttttt at least I remembered now! Better late than never 😉
Unlike your regular store-bought granola bars, these guys are super dense and hearty. They’re basically a hybrid between banana nut bread and a chewy granola bar. No complaining here !
Oh and you know how some granola bars are so hard you almost loose a tooth when you bite into them? These bars aren’t like that at all. They’re soft baked but still portable.
They’re super duper easy to make! Here is what ya need:
bananas
walnuts
raisins
oats
chia seeds
chocolate chips or cocoa nibs
cinnamon

Soft-Baked Banana Nut Granola Bars
Are your store-bought bars not cutting it? Make these simple, dense and hearty granola bars! They’re soft, chewy and naturally sweet for a perfect snack or breakfast!
Banana-Nut Bread Granola Bars {Vegan & GF}
Ingredients
- Banana-Nut Bread Granola Bars
- 1 cup walnuts
- 1 cup raisins soaked in water for 2 hours (you could skip this step)
- 2 ripe bananas
- 1 cup oats
- 1/3 cup. chia seeds I used the Chia Co
- 1/2 tsp. cinnamon
- 1/4 cup cocoa nibs or chocolate chips
Instructions
- Preheat oven to 350 degrees.
- In a food processor, combine walnuts, drained raisins, and banana. Blend for about 15 seconds, or until mixture is smooth.
- In a seperate bowl, combine remaining ingredients. Mix well then add banana mixture. Stir until fully combined.
- Line an 8x8 pan with parchment paper. Add batter and spread on bottom of the pan evenly. Top with banana slices, if desired.
- Bake for about 1 hour, or until bars are toasted.
- Let cool and slice.
- Enjoy!!

Tasty Clean-Eating Dessert: Caramel Apple Napoleons
The three best flavor combinations are as follows: Peanut Butter and Chocolate, Blueberry and Lemons, and the best of all, Caramel and apples! I haven’t done a recipe with this amazing combo before so I thought I’d give it a shot! But I wondered, what can I make that is unique, healthy and tasty??? Did some thinking and came up with the idea of incorporating these flavors into a Napoleon-style cake, and boy was that a great idea! A napoleon is like a mini-layered cake, but this one, of course is 100% clean, all-natural, no-sugar-added, and a million percent out-of-this-world delicious! So if your looking to make something sweet,cinnamon, caramel, and crunchy, you’ve got yourself a true winner!
Caramel Apple Napoleons
Crust
- 2/3 cup oat flour
- 1/3 cup oats
- 1/2 tsp. baking powder
- 1/4 tsp. cinnamon
- 1 Tbsp. honey/agave nectar
- 1/2 cup applesauce
- 1 egg white, whisked (or flax egg for vegan)
- 1/4 tsp. vanilla extract
Filling
- 1 small apple, chopped
- 1/4 tsp cinnamon
- 1/4 raisins, soaked in water for 2 hours
- 1/2 greek yogurt/ soy yogurt/coconut cream
- 1 Tbsp. crushed walnuts
- Preheat oven to 350 degrees.
- Combine all ingredients for crust in a medium bowl. Stir well, or until mix is completely combined and smooth.
- Spray cooking spray on a jelly roll pan. Spread crust mixture thin on bottom of pan.Bake for about 20 minutes, or until crust is golden brown.
- Combine apple and cinnamon in a small bowl and microwave for about 3 minutes, or until apples are soft.
- Drain the raisins and place in a food processor. Blend for about 30 seconds, or until raisins are a paste.
- Let crust cool and cut into 6 even rectangles.
- To assemble place on rectangle on the bottom then layer with greek yogurt (about 2 Tbsp.) and apples. Then top with another rectangle with more greek yogurt and apples. Then add another rectangle and add caramel (raisins) and walnuts on top.
- Repeat with remaining ingredients for the second napoleon.
- Enjoy!

Can you believe that I created this recipe 3 years ago? This was when I just started making recipes and posting them, wowwww I feel old! Anyways, during this time a few years ago I became introduced to chia seeds and was obsessed. Once I heard about chia seed jam, my life was never the same.
Did you ever try to make normal jam? It’s a super long process that I wouldn’t wish upon anyone, however this chia seed jam is super duper simple and fail proof.
You can make it in less than 20 minutes. Intrigued by chia seeds? They soak up all the blueberry juice to create a jam-like texture.
To add a pop of flavor, I added fresh lemon juice, but you could totally leave it out if its not your jam (pun intended).
Lemon Blueberry Chia Seed Jam Ingredients:
fresh blueberries
lemon juice
Substitutions for This Chia Seed Jam:
Blueberries: You can sub in any berry such as raspberries, blackberries or strawberries.
Maple syrup: You can add in any type of liquid sweetener such as honey or agave.
Storing Lemon-Blueberry Chia Seed Jam:
Store this chia jam in the fridge for up to 4 weeks.
Serving This Chia Seed Jam:
- Make a peanut butter and jelly sandwich
- Spread on any kind of toast or perhaps banana bread
- Use in this flourless blondie recipe
- Add to this mug cake
- Use in this acai bowl recipe
- Swirl on oatmeal or yogurt

Ingredients
- 3 cups of fresh blueberries
- 2 Tbsp. maple syrup
- 1/4 cup chia seeds
- juice of one lemon
Instructions
- In a small sauce pan, combine blueberries, maple syrup and lemon juice.
- Cook on medium-low heat and stir constantly until blueberries start to burst, about 5 minutes.
- Stir in chia seeds and cook another 15 minutes, or until jelly is thick.
- Remove from heat.
- Enjoy!!
